View Full Version : A 'filled' biscuit recipe

When I was putting DD's lunch box in the basket at daycare today I noticed a child in her class had these filled biscuits in his/her lunchbox. When I say filled I mean like 2 of those 'nice' biscuits (the rectangular biscuits with sugar on top) with some kind of filling inside them. I want to make something similiar if not the same as these. I have seen them made with those Latice biscuits but I am not sure what is in the middle. Am I making any sense lol...
Does anyone have a recipe or know what is in the middle of the biscuits - cos they looked yummy!
P.S. I am too chicken to ask the child's parent lol

My Mum makes a really yummy recipe with the latice biscuits.... its a cream cheese filling.
Here is a basic recipe
LATTICE SLICE
Base & Top: 2 packets lattice-shaped biscuits
Filling: 4 ozs cream cheese (I like Philidelphia)
4 ozs butter
1/2 castor sugar
1 teaspoon vanilla essence
2 teaspoons lemon juice
2 teaspoons gelatine, dissolved in 1/4 cup
hot water and cooled
Base:
1.Line a 28x18c slice tray with foil. Arrange 12 of the biscuits, sugar side down, in the tray to cover base. Set aside.
Filling:
2.Beat cream cheese, butter and sugar until well combined. Add vanilla, lemon juice, gelatine and water mixture.
3. Pour mixture over biscuits in tray... top with more lattice biscuits, sugar side up, and press down lightly. Chill until firm. Cut into sections.
Hi, I don't have a recipe but man it sure does sound yummy, I think I'll watch this thread with interest :yes:

Oh yum Taylors_Mum! Thats the same recipe (or i think it is :rolleyes: ) my Step mum used to make...so yummy! I didn't know what it was called, or what was in it, now i can make it! :smiliedance: Thanks!

I found a Sao Vanilla Slice - not sure if i would use passionfruit on it though...
Sao Vanilla Slice
Ingredients
1 Pkt of Arnotts Sao Biscuits
1 600ml Bottle of Cream (Can be Lite)
1 Pkt of Vanilla Instant Pudding
Icing
1 1/2 Icing sugar
2 Passsion fruits (Tinned passionfruit can be used)
1 desertspoon of butter
Mix all together put on top of biscuits
Method
Line a square container with foil. Put a layer of sao biscuits in the bottom
Beat cream and instant pudding together till thick,spread over biscuits put another layer of biscuits on top ice with passionfruit icing.
Put in fridge overnight
I think I might try both.. and I guess you could use pretty much any kind of biscuit as well

And another one:
Easy Vanilla Slice
Ingredients
250g packet Coffee Biscuits
300ml carton thickened Cream
1 cup milk
85g packet vanilla instant pudding
Method
Cover base of 23cm square slab pan with biscuits, plain side down. Combine cream and milk in large bowl, add pudding mix. Beat for 1 minute or until smooth.
Pour pudding mix over biscuits. Top with a layer of Morning Coffee Biscuits. plain side up. Refrigerate overnight then cut.

A friend of mine gave me this recipe and it is REALLY easy and SO YUMMMM!!!:thumbsup: My husband is a vanilla slice freak and prefers this to the bakery shop ones. My only tip though is that it's a bit boring made with the Sao's - use Milk Coffee biscuits instead. I have made it using both the vanilla pudding mix and the chocolate and they are both as good as each other.
And the best bit is that I used all the home brand (cheap) ingredients to make it (except for the pudding mix) and it turned out wonderfully!
