i was wondering if anyone has a simple recipe for a cake or biscuits that doesn't need eggs.
i have a friend visiting tomorrow and she is allergic to eggs and i wanted to make a cake or some biscuits that she can eat.
can anyone help???

How about anzac biscuits? Very easy and egg free...or if thats too boring, you could find a recipe for anzac slice.

I never use eggs in my biscuits. I dont really follow a recipe, so its a little hard to explain but I'll try!
You need some plain flour and rice flour in a bowl. (to a 3/4 plain flour to 1/4 rice flour ratio)
Add some butter, and rub in with your fingers until the mixture resembles fine crumbs.
Add some maple syrup (pure) to taste, and some milk - only enough to achieve a sticky consistancy. It needs to be able to hold together when you roll it into balls.
Add any goodies you like. (eg. choc chips, or coconut and sutlanas, etc).
Roll into balls and place on a baking paper lined tray, and flatten with a fork.
Bake in a 180 degree oven until golden! :chef:

You can substitute an egg with a bannana. It really works! My Ds is allergic to egg.

This is a really yummy Date and Walnut loaf recipe. It's great as there is no electric mixer involved and it's so quick to make.
If you want you can substitute sultanas or raisins in place of dates. Or you can replace walnuts with crushed nuts.
1 cup self-raising flour
1/2 cup sugar
1/2 tsp bi-carb
2 tsps cinnamon
1/2 cup chopped dates
1/2 cup chopped walnuts
1 oz butter
2/3 cup water
Sift flour, sugar, soda and cinnamon into bowl. Add the dates and walnuts, mix well. Heat butter and water in a saucepan until water just boils. Make a well in the centre of the dry ingredients, add hot liduid and mix thoroughly with a wooden spoon. Spoon into greased loaf or bar tin. Bake in moderate oven approx. 40 minutes.:chef: :chef:
