We LOVE pasta and I don't really have any decent recipes. I make Lasagne, but apart from that ... nothing much else.
The credit card has been getting a flogging at the local Italian Restaurant :( so what I'm really after are recipes that are like the food you get at Italian Restaurants.

Seafood
500g. Cooked prawns
60g. Butter
2 clvs. Garlic, crushed
1/2 cup dry white wine
300ml. cream
1 Tblsp. cornflour
1/4 cup water
1 tsp. lemon juice
1 Tblsp. chopped fresh parsley
3 shallots chopped
8 oysters in shell
Shell, devein & coarsely chop prawns.
Melt butter in pan, add garlic, cook, stirring until fragrant.
Add wine & cream.
Bring to boil, leave uncovered for 4 mins.
Stir in blended cornflour and water, stir until mixutre boils.
Add prawns and juice, simmer 2 mins.
Stir in parsley and shallots.
Garnish with oysters drizzled with a little sauce.
Serves 4.
Tuna & Mushroom
90g butter
1 large onion, finely chopped
450g. tuna drained
90g. button mushrooms
300ml. cream
2 Tbls. tomato paste
pinch black pepper
1 Tbls. chopped parsley
Melt butter in pan, add onion and tuna, cook, stirring until onion is soft.
Add mushrooms, cream, tomato paste & pepper, bring to boil then remove from heat immediately.
Stir in parsley
Serves 4.
Carbonara
4 rashers bacon or pancetta
pinch paprika
2 egg yolks
250g. fettucine
ground black pepper
1/3 cup cream (more or less depending on how creamy you want it)
60g. grated parmesan
30g butter
Remove rind from bacon, cut into think strips.
Gently cook bacon until crisp. Drain all but 2 Tbls. of fat from pan. Add cream and paprika, stir until combined.
Beat egg yolks and half the cheese until combined. Add fettucine to large pan of boiling water, boil, uncovered until just tender. Drain.
Return fettucine to pan with butter, toss over low heat until combined.
Add bacon mixture, toss well. Add egg mixture, toss until combined.
Season with pepper. Serve sprinkled with remaining cheese.
Serves 6.

Marinara
500g prawns
250g. scallops
45g anchovy fillets
8 oysters
1/2 cup dry white wine
2 Tbls. olive oil
5 Roma Tomatoes, peeled and chopped
2 cloves garlic, crushed
1 Tbls. tomato paste
1 Tbls. fresh parsley
1 Tbls. fresh mint
ground black pepper
Shell & devein prawns, cut scallops in half.
Drain anchovies on absorbent paper; chop finely.
Carefully remove oysters from shells.
Combine water and wine in frying pan, add scallops, cook 1 min; drain & remove from pan.
Add tomatoes, garlic and paste to pan, stir until combined, simmer, uncovered 2 mins.
Add seafood, simmer mixture further minute.
Stir in parsley, mint and pepper.
Serves 4.

Spaghetti alla puttanesca
This pasta sauce ostensibly was made by Neapolitan prostitutes, who hurriedly put it together between clients.
350g spaghetti or spaghettini
4 tbsp olive oil
1 garlic clove, finely sliced
6 anchovy fillets, drained of oil
400g can chopped tomatoes
2 tbsp small black olives, halved
Pinch of dried chilli flakes
1 tbsp small salted capers, rinsed
1/2 tsp dried oregano
1 tbsp parsley, finely chopped
Sea salt and black pepper
Cook the pasta in plenty of boiling salted water until al dente. Meanwhile, heat the oil in a frypan and gently cook the garlic for a minute or two. Add the anchovies and mash them into the oil. Add the tomatoes, olives, chilli and capers and cook over medium heat for 5 mins, stirring occasionally. Add oregano and parsley and season to taste.
Drain pasta well and toss with the sauce. Serve hot.
Serves 4.

Mamaduke, you're on a roll!
StormT, put your credit card to good use and buy yourself a pasta machine. We LOVE ours - you can add anything to fresh pasta and it tastes fantastico!
Our 2 favourites at the moment are -
*carbonara (just follow mamaduke's recipe)
*a mix of roasted cherry tomatoes, crispy pancetta, torn basil leaves and fresh grated parmesan.

I make another one which I just made up myself...
Fry some finely chopped onion with garlic until onion is soft.
Add chicken breasts (cut into strips and tenderised) and chopped bacon and fry until chicken is cooked through.
Add button mushrooms (chopped) and cook, remembering to keep stirring.
Add a tin of chopped roma/italian tomatoes and bring to boil.
You could also add a chicken stock cube for extra flavour.
Turn down heat and let simmer.
Add around a cup of cream and stir. Simmer gently for a few minutes.
Pour over your favourite pasta and garnish with chopped continental parsley.
Enjoy!

For a really quick and simple recipe you will need a packet of Gnocchi, 1/2 cup parmesen cheese and a can of evaporated milk.
Cook Gnocchi
In a saucepan heat together the evaporated milk and parmesen cheese then add gnocchi and serve.

2 small or one big clove of garlic, smashed/chopped
Handful of fresh basil, chopped
1 big teaspoon extra-virgin olive oil
1 big teaspoon butter
Salt to taste
A little grated parmesan (optional, Mil Lel is the best)
Melt the butter in the oil over a medium/low heat. Toss in the basil and garlic, and cook very slowly for 5 minutes. It should just be bubbling - you do NOT want it to brown.
Toss through your favourite cooked pasta, and salt as required
Serve up, and grate some parmesan over the top.
Best pasta you'll ever eat.
This is a recipe that my DH came up with & is delish, quick to make & very easy :chef:
500g of fresh pasta (you can you pkt if you wish)
8 rashers bacon cut into strips
garlic to taste (I use 2 cloves)
1/2 cup cream approx
handful of baby spinach leaves
1/4 tsp of ground nutmeg
freshly shaved parmesan to taste
Cook pasta according to directions until just tender & drain. Put garlic & bacon in a fry pan & cook until bacon is crisp. Add the spinach & toss until spinach is just wilted. Pour in the cream & stir through the nutmeg. Add the pasta to the fry pan & mix until heated through & well coated with the sauce. Put into bowls & spprinkle with some shaved parmesan. Enjoy & all done in just 10-20 mins ;)

My dad's absolute favourite dish made originally by our Chinese servant who was part of the family for nearly 60 odd years.
Tomato Soup Chicken (Originally Called Tomato Sauce Chicken)
Makes approx enough for about 6-8ppl
500gm-750g of Chicken Breasts or Thighs (whichever you prefer) cut into bit sized pieces
2 cans of Campbell tomato soup (you can use other types but this make the sauce to watery)
1 1/2 cans of water
500gms of pasta (shells, penne or spirals, macaroni I prefer penne but my mum prefers macaroni and dad spirals really personal choice)
Grated Cheese
Boil the pasta in some water with a dash of salt.
While the pasta is boiling. Fry the chicken in some olive oil until brown
Add the tomato soup
Use the empty tomato soup containers and put 1 1/2 cans of water into the soup
Bring to a boil and simmer for about 20 mins
Add grated cheese and stir in cheese and simmer for another 5 mins till the cheese is melted
Drain the pasta and add to the sauce
Serve immediately
A slight variation to this which I sometimes do is cut some bacon and fry it witht the chicken, add some mushrooms. Dad also loves it with some italian sausage not too much or it makes it too salty.
We went to my parents for lunch today and mum made this and she only used chicken and some bacon YUMMMO. My hubbie can cook this and its so easy and quick and you can make a huge batch and freeze some. I have be known to use the frozen batch and make it into a pasta bake by just adding cheese and chucking it in the oven :chef:
My hubbies first ever dish he cooked me nearly 8 years ago:
Bacon & Chicken Pasta
5 rashes of bacon chopped up
500gms of chicken breasts chopped into bite size pieces
enough flour to coat chicken
2tsp of crushed garlic
2x cans of crushed tomatoes or whole tomatoes (by the time you cook them they are crushed anyway)
tub of tomato paste
300gms of spaghetti, bucattini or thin spaghetti (whichever tickles your fancy i love bucattini)
Dry herbs - basil, oregano and thyme or me being slack italian herbs in a bottle I buy
Boil pasta in a little bit of salt water for about 10-12 mins till tender
While pasta is boiling coat chicken in a light coating of flour
Fry the garlic up and add the chicken till brown
Turn down heat to medium add tomatoes and tomato paste and herbs
Bring to boil add some water (1/2 can of water) and leave to simmer for about 1/2 an hour but keep and eye on it and stir constantly so it doesnt burn)
Drain pasta and serve the sauce on it.

500g Chicken Breast diced
500g Mushrooms
500g Bacon you can use diced or cut it yourself.
2x Onions chopped
1/4-1/2 cup Cream Cheese (depending on your own taste)
1 Can Evaporated Milk
I don't measure things i usually just throw them in.
Fry up Chicken until golden then add Onions, Bacon and mushrooms,
once the onions bacon and mushrooms are cooked then add the evap milk and stir it through, then add the cream cheese and stir until all mixed through.
Then add about a teaspoon of cornflour to thicken the mixture.
Drain cooked pasta and add sauce and mix through.
If i'm in a hurry or it's just me and the kids i don't even put chicken in as they don't like eating the chicken anyway. You don't even need to put the cream cheese in if you don't want or don't have any, i only just started adding it.
As you can tell by my recipes i dont use the correct terminology!!! sorry!!
Chicken mustard pasta
Cook up some pasta and fry some chicken (small pieces)
to make the sauce place a can of light evaporated milk with some djon mustard (few teaspoons) and seeded mustard (few tablespoons) with some white wine (optional). Its very yummy!! you can use cream for a richer version. Its also very nice poured over chicken breast on a bed of rice.
Capsicum and ricotta pasta
roast some capsicum
sautee some onion and garlic (we use heaps garlic) in olive oil add a bit of salt.
add the capsicum to the sautee and whizz it up with stick mixer. Add some smooth ricotta and YUMMO stir your pasta through.

we are pasta fiends.
This is our fave...
pasta spagetti or curly
bacon 4-6 rashers
tsp of abc sauce
can of tomatoes diced
tomato paste 1 tblspn
small can of tomato soup
(or you can use instead of the tomato stuff a provincale sauce -tomatoes onions abc sauce-this is a sweet thick soya sauce- sauteed up before meal prep and cool before using)
cream small tub
shallots or onion (half)
salt
pepper
cook pasta before-
fry off bacon and onions
chuck the rest in
simmer
then serve
balisimo!
To get extra fancy add pine nuts pre cooked with the bacon and onion and coriander)

Cream of chicken pasta bake
Approx 200g Pasta (i use spirals)
Approx 3- 4 rashes bacon
Half an onion
Can of contentail cream of chicken soup
milk (i just almost fill the chicken soup can with milk after i empty it)
Tasty cheese.
Method
Preheat over to 180.c ...i use a dish with a lid for the first 20mins to stop the cheese from burning...then take it off to allow for cheese to cook.
Get you pasta cooking. dont cook it all the way as it will cook more in the oven,
Dice up bacon & onion....The get a jug add in your can of chicken soup then your milk..
I add some garlic granuals in & pepper (you could use real garlic i spose)..then stir it up.
Now get your oven dish...i just use a round pyrex one with a lid on it. Then add your cooked pasta,bacon ,onion & stir it up a little...then pour over soup & milk mix. Sprinkle with tasty cheese then place lid on & put in over.
I cook it for about 20mins with lid on...then take off lid cook for a further 10mins you may need to adjust heat to your type of oven.
Sorry im terrible with giving details to this recipe..as it was just one my Aunt showed me to make.
You could add in other stuff if you want...like mushrooms or corn maybe...i just experiment..lol

I'm pretty sure I was Italian in a previous life.
Love the food, love the people, love the language (I can sit in a pizza shop - well, the ones where the owners are still actually Italian, and listen to them talk with a smile on my face...they're probably saying, "Yeah...like this chick needs another pizza!" but it all sounds beautiful to me!:o )
It's my favourite style of cooking - not much call for it (well, none actually) in the CSIRO diet I'm on but I will live vicariously through you!
