I need your help!!
I am not feeling very creative tonight. And i would love to cook a new yummy dish tonight!
I have chicken breast(lots), scotch fillet steak (lots) , some mince (but im not a huge fan of mince atm :barf: )
The normal veggies, onions, potatos, 1 carrot, forzen veggies...
Anything new and exciting you can think of but at the same time.. something a fussy DP can eat. No pressure! :D

I know this is a little late, but maybe you can try it another day.
I'm over mince at the moment too!
Chicken with creamy mustard sauce
500g chicken breast chopped into cubes (keeps it more tender)
1 onion, finely chopped
1 clove garlic
2 Tbs wholegrain mustard
1 can light evaporated milk
1.5 Tbs corn flour
salt & pepper to season
parsley to garnish
mixture of veggies (i sometimes use capsicum & carrot & broccoli, but could use anything you like or simply throw in a few handfuls of frozen veg)
Spray frying pan with cooking oil spray and brown the onions and garlic, set aside.
More spray, brown the chicken for about 5 mins.
Reduce heat, add onion and garlic.
Combine milk, mustard, cornflour, salt and pepper and add to chicken.
Stir until thickened. Season and serve over rice or pasta.
OR
Chicken parcels (Anna's specialty - a family favourite)
300g (or so) of chicken breast cut into strips
4 sheets (or 1 each) of light puff pastry
sweet chilli sauce
4 strips of bacon, cut finely and fried
Cream
Grated cheese
Lots of different frozen veggies (whatever you like)
Lay each puff pastry sheet out, 1 per person, and let them thaw.
Spread each puff pastry sheet with desired amount of sweet chilli sauce (to the edges).
Lay out strips of the chicken in a square pattern in the centre of each pastry sheet.
Sprinkle over some bacon, then a small handful of frozen veggies.
Sprinkle over some cheese then pour a little (um, maybe 2-3 Tbs) of cream.
(Here comes the tricky part)
Fold over one corner as far as it will go, then fold the opposite corner over it. Then fold the other two corners the same way, making sure you seal the "parcel" (it's important not to overfill with ingredients as the pastry won't fold into parcels and it will spill out)
Carefully place on an oven tray lined with baking paper and bake on 180 for 20-30 mins or until golden.
Serve with a side salad (although you'll have a hard time getting through the parcel alone!)
NOTE: The chicken will cook through because it's on the bottom of the parcel, closest to the heat. The cream and cheese will combine into a sauce inside the parcel, but some may seep out while cooking, not to worry! This is a very versatile recipe and virtually ANYTHING could be added, but these ingredients are damn good!

Cook your :D yummy:yelclap: scotch fillet to your liking and set aside to rest.
To the frying pan you cooked the steak in, add 2 cups of nice red wine and cook until it's reduced - it may be a little sticky. Add a good dollop of cream or butter and combine, this should leave you with a delicious sauce to serve with your steak (all the alcohol will be cooked out so it's safe for kids as well). Serve over mashed potato and with steamed carrots and asparagus (or whatever!)

Your chicken parcels rock!!!
I found them to big so i made them into largish triangles :smiliedance:
