View Full Version : WINTER COMFORT FOOD - Warm choc pudding

O.k. I've got a bit of a 'thing' for puddings of late....being pregnant with 'cravings'!
Here's an easy recipe for CHOCOLATE SELF-SAUCING PUDDING
100g butter
1 egg
1 tsp vanilla essence / For the adults a dash of whiskey!
3/4 cup sugar
2 tablespoons cocoa
1 1/4 cups plain flour
2 tsp baking powder
Sauce
1/2 cup brown sugar
1 tablespoon cornflour
1/4 cup cocoa
2 cups boiling water
1. Beat butter, sugar, egg and vanilla with electric mixer
2. Sift other dry ingreadients: flour, baking powder and cocoa
3. Fold all ingreadients together
(this is suppose to be a dry mixture when combined so don't panic)
4. Spoon into greased oven proof dish
5. Sprinkle the combined sauce mixture over the pudding
6. Pour 2 cups boiling water over the back of a spoon onto pudding
7. Bake at 180 c for approx 35 mins or until pudding springs back when touched
Serve with thickened cream/ custard, fresh strawberries.......Mmmmm
I've had a thing for bread and Butter pudding and Apple crumble too!

I can't add anything now, as I am obsessed with chocolate pudding... :D But I do usually make a mean butterscotch self saucing pudding, but I've lost my recipe book!

Mmmm, butterscotch sounds yummy! Might have to experiment :chef:

Hi, do you have the recipe for your bread and butter pudding, my mum makes an awesome one but she's 2 states away and I've asked her on the phone and she says it that quick that I always forget something (and I don't have time to write it all down).

Hi, this is the one I make.
Ingredients
12 slices raisin bread
100g unsalted butter, softened
3 tablespoons dark rum (optional)
few drops of vanilla essence
300ml milk
300ml cream
8 egg yolks
100g caster sugar
When bananas are not too expensive try adding sliced banana in between each layer of bread :thumbsup:
You can also make half with raisin bread and half with white bread, or just white bread and add the raisins/ saltanas, nutmeg, cinnamon etc.
Method
Preheat the oven to 180°C
1. Beat the softened butter and rum together. Grease a two litre ovenproof dish with butter.
2. Butter the bread on both sides and put arrange layers into dish.
3. Add the vanilla essence and place in a pot with the milk and cream and allow to simmer. Whisk the yolks and sugar together. Pour the milk and cream onto the yolks stirring all the time. Pour the custard mixture over the bread and leave it to soak for 15 minutes before cooking.
4. Place the dish in a roasting tray and three-quarters fill with warm water. Cook for 30-45 minutes or until the pudding is just set.

Here's a recipe for Butterscotch Self-Saucing Pudding that I'll be trying out soon!
1 Preheat oven to 180°C. Grease a 1.5 litre (6 cup) ovenproof dish. Combine 1/4 cup (55g) brown sugar and 11/4 cups (190g) self-raising flour in a bowl. Add 100g butter, melted, 1 egg, 1/2 cup (125ml) milk and 2 tbs golden syrup and stir until combined. Spoon into greased dish.
2 Combine 1/2 cup (100g) brown sugar and 1 tbs cornflour. Sprinkle over the pudding mixture.
3 Combine 11/2 cups (375ml) boiling water with 2 tbs golden syrup. Pour over the top of the pudding mixture and bake for 40-45 minutes or until a skewer inserted into the centre comes out clean. Serve with double cream or ice cream.
