I'm after some recipes that are sugar (sucrose) free. I know there is crystallised fructose on the market but it can be costly. I know you can substitute juice, purees and honey for sugar but I have no idea how. Does anyone have any tips or recipes they're like to share with me....TIA

I was looking for something to make with some overripe bananas, and came across this.

I made them as biscuits, but next time I think I would make them as bars.

2 1/2 cups rolled oats
1/2 tsp salt
1/2 1 tsp. cinnamon
1/4 c walnut or vegetable oil
3/4 c chopped walnuts, pecans, or macadamia nuts (I actually used sultanas instead)
2 1/4 c sliced bananas, lightly packed (Use sweet, fully ripened bananas (with freckling). Hard, green-tinged specimens won't produce enough sweetness to make good cookies and you may need to add sugar.)

Preheat oven to 200 degrees.

Combine rolled oats, salt, and cinnamon. Add oil and toss to coat. Set aside.

Mash bananas with a fork or liquefy in a blender. Add nuts and bananas to the oat mixture and mix well.
I didn't have quite enough bananas, so I added some stewed apples.

Place on tray and bake on a high rack for 10 minutes. Remove from the oven and press each cookie flatter with a fork. Return cookies to the oven and bake another 8-10 minutes.

(You can also add a little bit of flour, which holds it together a little bit better)

Trial & error hun lol !

If K or other persons you are cooking for can have honey then it can be used to replace sugar.

Something like 3/4 cup of honey can replace one cup of sugar. The liquid will need to be reduced usually by 1/2 cup for each cup of honey you add to the recipe though but as I said it can often be trial & error !

Awesome....thanks Ally.

We've noticed that K has a permanent rash that seems to get worse when he has a fair bit of sugar in one day so we've decided to see if cutting it out will help.....yet another trial and error thing lol

No probs ! Yeah gotta love it when you have to try & figure out whats going on & whats causing it etc.

The failsafe diet is always worth a look into also if you havent already :yes:

You can try Xyletol (sp??) in place of sugar, gram for gram.

Or Stevia. But that has a bitter aftertaste, so it's better used to enhance the sweetness of the sugar/honey/maple syrup.

Both available from health food stores.

yeah unfortunately the one health food store in town here doesn't stock it. Plus its quite pricey isn't it?

you can get apple concentrate from the health store, 1/2 cup replaces 1 cup of sugar but its about $11 for 360ml. I have used it in cakes but not cookies yet, i also use it to sweeten our yogurt.
