hey guys, any ideas wat to do with the chicken fillet?

i want to do sumthing diffrent other than just that an vegies,
i no there is lots u can do just cant think of anything right now..

Im having chicken tonight :smiliedance:, im going to marninate it in a zest food spice rub, you can get them in coles/woolies and then im going to have them with cous cous and a nice warm potato salad. mmmmmm

Cassarole, or cook th chicken and at it to pasta sauce, with onions mushrooms and mix the pasta in it.

How bout chicken chopped up mixed with cooked spinach and some cottage cheese?Spinach is good for iron:thumbsup:

Chop it up and curry it. Fry off a quarter on an onion, a clove of garlic and a little bit (about a teaspoon) of ginger. Add the chicken, let that cook off and then add some chilli (to taste), a quarter of a teaspoon of turmeric, half a teaspoon of ground cumin and half a teaspoon of ground coriander. Put in a tin of coconut milk, some chopped up green beans and a handful of roasted cashews. Simmer until the beans are cooked and toss in a handful of fresh coriander leaver. Serve with rice.

You could also make fried chicken: have two bowls ready, one with a mixture of flour, salt, paprika (for colour), chilli powder (for flavour - this is optional), black pepper and pretty much anything else you fancy. In the other bowl, have some beaten eggs. Cut the chicken into strips, coat with the flour, then the egg, then the flour again. Cook in hot oil. Alternatively, the slightly less greasy and much more crunchy version is to spray on some cooking oil and put them in the oven until they are golden brown. Serve with coleslaw or salad.

Pesto chicken and pasta or rice. It really couldn't get much simpler. You could make your own pesto or just buy a jar. I like the Sacla one the best for this - if that brand is unavailable, I do tend to make my own (bunch of basil, some lemon juice, a bit of the zest, a handful of finely grated parmesan, salt and olive oil all dumped into a food processor and blitzed together). For the chicken pesto, sweat off a quarter of an onion and a clove of garlic in some olive oil, add chicken chunks and some chopped mushroom. Once they are pretty much cooked, dump in the pesto and about two tablespoons of sour cream. Season accordingly and serve with pasta or rice.

Chicken kebabs - marinade, then put on skewers with other yummy things (bacon, pineapple, onion, mushrooms, tomato etc)

Chicken Thai balls/burgers - put chook in food processor with egg, breadcrumbs, herbs and sweet chili sauce. Mince up, coat in cornflour, shallow fry in a pan.

Chicken lasagne - same as meat, but use chook

Chicken tacos - same as meat, but use chook

Warm chicken salad.

I was about to strangle my kids for not eating the chicken fillets I bought..

Until I decided to buy some 'Morrocan Spice Mix' by masterfoods and rubbed it all over it and fried it.. then served it with a simple salad.
They ate the whole damn lot and came back asking for more.. which is totoally unheard of in this house as my son 'Hates' chicken (funny how he will eat KFC though)

Rubbing any of the great spice mixes is a brilliant way to turn boring chicken into something much tastier.

For something different, i cook up a Creamy Bacon Carbonara packet mix, and add some vegies and diced chicken pieces.

I cook it on the stove (easier to add things), and chuck in some sliced carrots, broccoli, peas, whatever you want, and let them cook with it. I cook the chicken pieces in the frypan and add them at the end, so they're not overcooked. It really yummy, and cheap too.

I've also done the same thing with one of the curry packet mixes (can't remember which, haven't done it for a while), and add some partly cooked tiny diced potato pieces. Can also add sweet potato too.

I coat my chicken in French Onion Soup Mix. Put the soup mix in a freezer bag and then chuck the chicken in as well. give it a good shake and I cook mine in the electric frypan on low for about 20-25mins. YUM!!!!!!

We also use the Rice packets with either chicken or ham.

For an easy quick meal I usually cube some chicken and cook it in a big pot. Preheat your oven to 180 degrees. Then I add whatever vegies we feel like (eg. chopped carrots, zucchini, corn and peas etc). Add some creamy chicken and vegies soup and a little bit of chicken stock, and simmer until vegies are cooked through.
In the meantime cook a packet of pasta, drain it, then place pasta in the bottom of a casserole dish.
Once chicken and vegies are cooked through, pour mixture onto the pasta.
In a small bowl combine some grated cheese and cornflake crumbs, then sprinkle it over the chicken dish.
Bake in the oven until the top is nice and golden and crispy.

Home made chicken schnitzel is the best!

1. Chicken breast divided through center to make 2 thin fillets
2. Flour both sides
3. Dip in egg
4. Dip in bread crumbs
5. Fry in skillet pan

Very tender and yummy. Serve with salad, pasta/ rice dish, potato bake or a variety of veggies or you can make your own chicken schnitzel burger.
