Hey

I gotta a couple of people coming over for tea on Sat night. I would really love some suggestions on something to cook. I was thinking of having three courses, but I wanted something that I could either make during the day and heat up OR something quick to make. It doesnt have to be easy or cheap. Any suggestions would be wonderful......:hugs:

I love individual beef wellingtons for dinner parties - they're quite simple, reasonably quick, and you can prepare them in advance to go into the oven when your guests are there, and you're not stuck in the kitchen.

Preparation time: 30 minutes. Baking time: 25 to 30 minutes. Oven temperature: 230 degrees celcius. Serves: 4.

4 beef tenderloin steaks, 150g. each, fat trimmed
2 tbsp. butter
Salt & pepper to taste
100g. fresh mushrooms, chopped
5 frozen puff pastry sheets, thawed
Liverwurst
peppercorns (opt.)

EGG GLAZE:

1 egg
2 tbsp. milk

1. Spread both sides of steaks with 1 teaspoon butter each. Sprinkle with salt and pepper. Place on cookie sheet. Bake at 450 degrees for 10 minutes. Chill 10 minutes.
2. In a skillet, melt remaining butter. Add mushrooms. Saute over medium heat until cooked and dry. Turn out onto plate. Cool.
3. Place 1/4 of the mushrooms in the center of each puff pastry sheet. Spread to cover a 5 - 7cm area. Top each with 1 slice liverwurst, if used. Place 1 steak on top of each.
4. Bring pastry up over steak. Wrap completely. Brush with water. Seal. Place, seam-side down on baking sheet.
5. Cut some of spare puff pastry sheet into shapes.
6. To make glaze, in a small bowl, beat together egg and milk. Brush over pastry-wrapped steaks. 7. Cut 3 air vents in each. Decorate with pastry cut-outs. Bake at 230 degrees for 15 minutes or until golden.

Delicious! :chef:

you can't beat a giant communal bowl of pasta that everyone passes around and helps themselves out of. making your own pasta is pretty simple, but if you don't know how, then any fresh bought will do!! and it takes bugger all time to cook!!

using french sticks to make garlic bread is also really easy...... you just use butter, garlic, crushed basil (you can buy it from woolies in the fruit and vegie section), and mozzarella. mix all the ingrediants together to taste, then spread between inch wide cuts in the french stick. don't be afraid to use lots!! wrap in alfoil and leave in the oven on a fairly low heat untill all the cheese is melted. then unwrap it and heat it right up for about two minutes just to get a crispier texture.

For dessert, there is always a old fashioned Trifle, or in this weather, go the Plum Pudding with brandy sauce and custard to chase the roast.

Soup is always a good starter, especially when it is cold. And you could serve a mug of mulled wine or gluhwein on arrival.

I usually start with a nice cheese platter. Then my favourites for mains are either a roast, individual Beef and Guiness Pies or a Risotto. You can make the pie casserole mix ahead of time as it takes 3 hours to make it nice and tender. This is a link to the recipe- http://www.culinarycafe.com/Ethnic_Dishes/Beef-Guinness-Pie.html The recipe is for just one normal pie. I usually halve it depending on how many people I'm having over. I use individual ramekins for pies and serve it with mashed potato and beans. It is delicious! I usually make some sort of cheesecake for dessert but for winter maybe some sticky date pudding with ice cream? What ever you decide to serve I hope it goes well!:D

Gluhwein!! OMG I haven't had that since I lived in Austria. There is nothing like it for warming you up when it's snowing outside. It's awesome stuff.

If you want to do three courses how about potato and leek soup, roast lamb with rosemary pototoes and steamed green vegies and a baked berry cheese cake for dessert.
You could make the soup and the cheesecake the day before and then heat up the soup and bung the roast in the oven and steam the vegies on the night.
any help?
