Hi all
The inlaws have a few mandarin trees and we have bags of them and will continue to get them and I have no idea what to do with them....does anyone have any recipes for mandarins?

I wish you lived next door to me! Mandarins are my strongest craving for this whole pregnancy.

Hi, for a deliciously fragrant cake (it almost smells like a mandarin perfume!)
Nigella Lawson has a winner at http://www.nigella.com/recipes/recipe.asp?article=174

Hope you like it, I made it for Mother's Day and sprinkled icing sugar on it,

Mandarin Tart- Recipe From The Queensland Fruit And Vegetable Growers

Serving size: Serves 6
Cooking time: Unspecified

INGREDIENTS

1 x 24-26 cm ready made pastry case
250g cream cheese, softened
1/2 cup caster sugar
1 cup thickened cream
6-8 mandarins, seeds and pith removed
Honey to glaze, gently heated
METHOD

Beat cream cheese and sugar together and fold through cream.
Spoon in pastry case and refrigerate overnight.
Arrange mandarin slices, brush with glaze and serve chilled.
For those colder days place tart under the grill and slightly warm.

I haven't tried it but the picture looked good - and it looked easy - it was from the womans weekly...
Thanks for this thread, I thought of starting the same one...mandy's are so cheap!
