Hiya!!
Im making special fried rice for dinner later and have cooked the rice already, if I put it in the fridge now will it be ok to fry later on with the vegies? Have just thought though that rice can be one of those dodgy things can't it, my friends are coming round and I don't want to give them food poisoning?
Shall I just cook some more later on? Decisions, decisions, any advice welcome!!! :wave:

I think plain rice would be one of the least things you could get food poisoning from. Unless you leave it out of the fridge for a week it should be fine.
You can put the cooked rice in the fridge and then fry it off and add the other ingredients before you serve it. Thats what I would do anyway. Freshly fried is the best.

Hi Kerry, you are right about rice being one of those foods prone to growing nasties- a lovely high starch/sugar content and moist environment it ferments and goes yuck very easily if left out in a warm environment.
Stored in your fridge it is totally fine. Actually it is the best way to make fried rice!
I just wouldn't be packing fried rice in the kids' unrefrigerated lunchboxes or eating leftover rice salad from a picnic/BBQ.

Fried rice is definitely best made with rice that's been cooked a while in advance. The idea is to spread it out as flat as possible on a baking tray or similar so it cools down super fast, then chuck it into a bowl and chill it until you're ready to fry it up. The quick cooling and spreading out on a tray also stops it getting really sticky, so it's easier to fry up later.
