View Full Version : Vegetable oil substitute for muffins?

I'm just wondering if there's something healthier I could substitute vegetable oil for in muffins that won't affect the taste?

I've finally found this fabulous muffin recipe, but it has 3/4 cup of vegetable oil in it. Is it better for you than butter or is there another oil that works better?

I know olive oil is better for you, but I've found that affects the consistency of the finished product and also the taste.

i dont know but i just use canola oil. I guess you could experiemnt with other oils but some of them are very pricey (macadamia oil etc). I use olive oil in savoury muffins.

Hi,

You could maybe try sunflower or grape seed oil.

The other thing I do if making muffins for DD is to substitute at least half of the oil and sugar amounts with apple juice or apple puree. It adds sweetness and moisture and cuts down on the sugar and fat.

I use grapeseed oil.

Sometimes fruit puree as a sub. works well, sometimes it leads to a dry muffin

coconut oil. You can buy unrefined which tastes like coconut and is YUMMY in banana muffins, otherwise get refined and you can't taste the coconut (it think I got that right? Maybe ask sales assistant for advice). You'll need to get it from a health food store tho and its not cheap. But a lot of people say its a lot better for you (despite being saturated fat). Its what I use.

Rice bran oil or peanut oil... peanut oil tastes good too... vegetable oil isnt as evil as you think too :D

Coconut oil is VERY bad for you, it contains a whopping 92% saturated fat :eek: (the highest of all oils according to the source I got it from).

I use grapeseed oil, it is a much healthier choice with only 12% saturated fat, the rest of the fat is mono/polyunsaturated fat :thumbsup:

It is very high in saturated fat but apparently it is also very good for you, check out coconutoil.com. Some very interesting info....

But like I said, it is expensive esp if you are using 3/4 cup every time you make muffins!

Prunes! They work well in chocolate muffins, and I use olive oil, which isn't bad in chocolate muffins.

Pureed apple works well if they're sweet muffins.

SAHM could I have a copy of your recipe. I've been searching for a great muffin recipe. Lost the one I had that uses oil but find they get the best results.

I usually just stick to veg oil, or ill sub with light olive oil because you can't usually taste it. Just steer clear of the extra virgin.
