I have an abundance of carrots here, can anyone help me making a nice (easy) carrot cake!
I also wouldn't mind testing out the cake function on my Breville Breadmaker... so if anyone can help there with a recipe it would be much appreciated :D

I used this recipe for Ry's birthday where I made mini carrot cakes - they were yummy.

1/2 cup vegetable oil
3 eggs beaten lightly
1.5 Cups SR Flour
3 quarters of a cup of caster sugar
1/2 teaspoon of ground cinnamon
2 cups firmly packed coarsely grated carrot
3 quarters of a cup of drained crushed pineapple

Mix oil. eggs, flour, sugar and cinnamon in large bowl until combined
Stir in carrot and pineapple
Pour mixture into greased muffin tin
Bake in moderate oven about 35 minutes
Stand cake 5 minutes then turn onto wire rack

When cool, put on extra yummy icing:
50g softened butter
Half a cup of softened cream cheese
2 and a half cups of icing sugar mixture

Mix butter, cream cheese in small bowl with electric mixer until light and fluffy. Gradually add icing sugar.:chef:

Try replacing some of the oil with yogurt instead, up to half of it, to make a lower fat cake :) Or you could try applesauce.

Oooh excellent! Although this calls for a trip for some SR flour (I swear I had some!!)

I tend to use the thicker Greek yogurt, but it probably doesn't matter.

Seekrit you can use plain flour, just add baking powder. My tin of Wards baking powder says 2 tsp of baking powder for every cup of plain flour to make self raising. It also says to sift it together, but I never sift anything.

Oh I knew there was a way I just didn't realise it was baking powder!

Next up then - cinnamon alternative? LOL

Nutmeg & ginger? Not sure on quantities though. I have a carrot bread recipe that uses brown sugar, cinnamon, nutmeg, ginger and raisins and it's yummy.
