Does anyone have a fairly simple recipe for Quiche, i have never made one before but love them!!!!

This is a really simple one I make all the time. It's a bacon and Cheese so great for fussy eaters.

I sheet of Puff Pastry
100g of chopped Bacon
1 small onion, finly chopped
2 eggs
50g of grated cheese
150ml of milk
150ml cream
salt and pepper

Oil pie dish, line with puff pastry chopping off the overhanging bits and filling in the gaps with the offcuts.

Fry Bacon and Onion
Beat egg, cheese, milk, cream
Add Bacon and onion and add salt and pepper to taste
Pour mixture into Pie dish
Cook in oven on 180 for approx 20min or until no longer sloppy.



You can alternate it to your own liking as well. I don't measure the bacon or the cheese just chuck it in. Takes me about 1/2 from start to finish and chucked in the fridge with a bit of glad wrap over it and it can do a couple of nights dinner!

I make lots of quiches! Yes you can use the wavey dish but I prefer to use just a round flat dish...less fuss with putting the pastry in. You can also do fancy stuff like cut and twirl the pastry on the top if the lip of the pie dish is wide. You may want to spread a little oil on the lip so that it wont stick but use a fork or your fingers to press it on so that it does not slip back into the dish when cooking.

It is a pretty easy make so yes I am sure you can double it. So you have the quantities for eggs v's milk, you can also use cream or riccotta (use the an beater). I dont go with a reciepe as such, I usually use around 5-6 eggs for every 1/4 cup of liquid.

For filling you can also use spinach steamed or frozen (just thaw and squeeze out excess water), mushrooms, ham, asparagus, tomatos feta or normal cheese on top. Dont forget to season with a little S&P. If you want, make one half fancy for you a DH and make the other half plain for the kids. Or make two quiches...it stores well and makes for a great easy reheatable lunch.
