Hi lovely ladies and gents, i have a quick question, can you freeze fresh raspberries? If not, do you use fresh raspberries in your cakes/scones etc? Ive found sometimes it makes everything a bit soggy. Ive got a load in my fridge and feel the need to do use them up!

Yep you can freeze them :yes: We used to always have a container of berries in the freezer. they can hold moisture though and I found they sometimes make things like cheese cake a little soft but were fine for muffins etc :)
I think :detective:I was told to combat sour or soggy berries to spread them out over a piece of paper towel on a plate and sprinkle with a little icing sugar -leave them till needed then shake them off gently before adding :)

OOh there is also a selection of recipes that you can look up that call for frozen over fresh :)

If you have space, spread the berries out on a tray when you put them in the freezer so that they freeze individually instead of in a block. Once frozen you can put them into freezer bags or containers. They will keep some shape when you defrost them but will be a bit soggier than fresh berries.

You have to freeze them separately before putting them in the bag together or they will be mushy when you thaw them. You don't need to add anything to them, just use a freezer bag and get ALL the air out of the bag so they wont freezer burn.
