I did a chicken and leek lasagne last week - cooked up chicken and leek with a tomato based sauce for the meat layer, then used ricotta and spinach for the cheesy layer. It was kind of a combination of 2 recipes, but it turned out really yummy.

My husband does a chicken in brandy cream sauce (it was the first meal he cooked for me when we started going out - hence why I stuck around :laughing: ). The sauce has 2 leeks cooked till they are tender, then add 1/3 cup brandy or cognac and cook till reduced by half. Add 2/3 cup cream and cook till sauce thickens. Serve over cooked chicken breast with cooked flaked almonds over the top. VERY easy and VERY yum - won my heart!

Here is a really simple one:

LEEK AND CORN CHOWDER-very easy!

3 med leeks
6 rashers bacon
1 medium kumara} chopped
2 med carrots
1 med potato

2 cups water
1 ch. stock cube
440gms can corn kernels
30 gms butter
1/4 cup plain flour
1 cup milk

Combine leeks, bacon, kumara, potato, carrots, water and stock cube in large saucepan. Cover, bring to boil and simmer about 25 mins or until tender. Stir in corn.
Melt butter in small saucepan, add flour, gradually stir in milk and stir continuously until boils and thickens. Stir into veges and reheat for serving.:chef:

I make chicken mushroom and leek pies and they're delicious. I don't use a recipe, just make it up so I don't know quantities.

Make the filling:
Cook chopped leeks & mushies, put aside. Brown finely diced chicken, add vegies back. Add white wine, cream, cheese or whatever else you like to make a sauce.

Put puff pastry into pie trays. Let the mix cool a bit and spoon into little pie trays. Top with pastry and cook until they look and smell fabulous.
