View Full Version : Iced Apple Cake recipe
I'm hoping someone can help me, i've been searching the internet for an iced apple cake recipe, you know the ones you get from the bakery that have soft apple inbetwen 2 rounds of sweet dough topped with white icing. I cant seem to find anything, all I really need is the recipe for the dough. If anyone could help me that would be great. Thanks.

I have a dough that I use for date slice, and was thinking the other day it would be great for those apple slices (if I can figure how to get the apple to go sticky). It's a kind of soft, sweet "cakey" sort of pastry, but holds together during cooking (although slightly crumbly to eat).
Here 'tis:
125g butter
1/2 C sugar
1 egg
1 3/4 C flour (plain)
1 tsp Baking powder
Cream butter and sugar until pale and fluffy. Add the egg and beat well. Sift in the flour and B.P., then mix to combine.
It will look way too dry and crumbly but don't panic, it does come together into a soft dough. Use your bare hands to mash it all together in the bowl until it looks like dough, then split in into two portions. First half gets pressed into the base of your tin (for me, this is a 20cm round cake tin, but a square one works just as well). Then you put in your filling (cold). Then you roll out the remaining dough to the same shape and gently place it on top.
When I do this for date slice I cook it for 25-30 mins until it goes medium golden in colour. Then when it's cold, slice into pieces and dust with icing sugar. I usually put baking paper on the bottom of the cake tin, it pops out fairly easily once cool.
