View Full Version : 1001 ways to serve rice - ideas needed!
We have a VERY lean period coming up (6 weeks with no income) and a friend of mine dropped off a 10kg bag of long grain rice yesterday so that we would always have something in the cupboard during this time.
I need as many recipes as possible with inexpensive ingredients (and rice!) that will keep my dh and kids happy for the next 6 weeks or so!
Any suggestions will be gratefully recieved and used according to my families taste preferences!

get yourself a 10 kg bag of spuds as well Kyra, different fruit and veg places often have them on special for $2.99, $3.99, and lots of eggs and flour as well. :yes:
frittatas with rice are good, the rice makes it go heaps further and you can throw in whatever you have on hand, vegies, leftover meat etc.
fried rice is another good one, again using whatever you have on hand.
Im going to go and have a look at my recipes, im the queen of budget yummy dinners, lol, so i will post more tonight :D

I remember before my friend only having rice as he'd spent all his cash on beer :yes: He used to live here for 4 months but we had to throw him out cause he was the lazyest guy on the planet. So for a treat he'd add pepper to the rice or maybe some peas... other than that it was just rice. But I think vegetables are good, peas, sweetcorn any veg really ! Tonight I had chicken curry and rice .. yummy ! I can remember days with only cash to feed the kids, they're an expensive hobby... I'll try and think of some suggestions :wave:

If you like mexican... you could make bean chilli. We have it all the time, and the ingredients vary depending on what I have in the fridge. It is basically a can of kidney beans, can of diced tomatoes, onion, cumin, chilli, garlic... and then corn/capsicum/carrot... whatever else you have on hand.
I also chuck other things in, like tomato paste etc... whatever I feel like really :D .

I cooked a rice dish just 2 days ago for my family its wasnt anything special but the kids licked the plates clean(which is always a bonus) :D ok here goes:
Ingredients:
rice.
2 cans of diced tomatoes. ( you can use 1 depending on the size of your family)
1 can of kidney beans
1 med onion
garlic
oil
oregano
salt.
Method:
Chop the onions and garlic,heat the oil,add onions+garlic till soft,add tinned tomatoes,oregano,salt,pepper cook for 20 mins add the beans cook for another 10 minutes and then just add boil the rice and add the sauce.
you can also put in some diced meat if you like(i usually use chuck steak(cheap cut) or you can use chicken drumsticks. PS:add meats with the onions then the rest of ingredients.

We just finished a 10kg bag of rice. We practially lived on Fried Rice and Sweet and sour pork/chicken/beef.
With the rice we just keep it simple due to fussy DF it contains broccoli, cauliflour, egg, ham/chicken (leftover meat) and to season it we just use soy sauce. Yummo.
With the sweet and sour its just whatever meat you have cook that first. For the sauce its brown sugar, cornflour, tin pineapple (with juice), vinegar and thats it pretty simple.

For a simple change from plain rice, cook it in something other than water. Try a broth (on sale or make your own) or my mother used to use orange juice. I'd guess maybe half orange juice and water though.
I usually make fried rice with any leftovers. Dead easy. Scramble an egg or two (or make a thin omelet) and set aside. Fry/stir fry the vegetables you want, add your cold leftover rice and toss it around to get the rice coated with the oil/pan juice and to break up any clumps of rice. Add your cooked egg back in. Season with pepper and a bit of soy sauce. And you're done.
Edit: cabbage rolls usually have a rice filling, though I dont' have a recipe to hand and have never made them. I'm not sure it's kid friendly though they may eat the filling and not the cabbage.

It may not be Arborio rice but you could still make some simple risottos. We love Risotto with mushrooms, peas, capsicum (any vege type really) and then you make a heap of mashed pumpkin and/or sweet potato and pile it on top followed by some grated cheese.MMMmmmm...... If the budget stretches you can add a bit of chicken and/or bacon.:chef:
You could always make creamy rice (or rice cream) for dessert.. i have a yummy recipe if you need it... all it needs is milk, sugar and some custard powder i think! mmm very delish :yes:

Creamy Rice
½ cup sugar
2 Tablespoons Custard Powder
2 Cups Milk
½ Cup Rice
Boil Rice in slightly salty water for 10 minutes, remove from heat and drain with running hot water.
Boil milk, once boiled add rice and sugar. Add tiny bit of milk to Custard Powder to make a smooth paste. While continuously stirring add custard powder and continue to stir while simmering for 5 minutes.
Enjoy! :D
P.s i double the recipe so i have some left over!

Yummy cheesy tuna bake :)
cook the rice, say 2 cups (uncooked) and make a cheese sauce. I usually cook an onion in the butter as well. Pour cooked rice into casserole dish, add a tin of whole tomatoes, chopped, a tin of tuna in springwater, a tiny bit of cayenne pepper (if you want) and paprika (say 1/2 tsp cayenne) , pour cheese sauce mixture over top and bake. You can vary this by adding bacon with the onion, or using chicken instead of tuna (tuna is usually much cheaper though!) and various vegies, frozen broccoli, cauliflower whatever you have on hand.

Chicken Rice!!!
Blend an onion, a clove or two of garlic, and a bit of ginger and fry in a sauce pan for a couple of minutes. Add some chicken stock and let it boil. Now add one cup of stock for every cup of rice into your cooker/ pan and allow the rice to cook in the stock! Serve with roasted or barbecued chicken, stir fry veges and sweet chilli sauce...mmm yum! This a favourite recipe at both mine and mum's place.

We have started on the big bag, but have since been given a bit of food, so have taken a break and will back onto rice in a couple of days!

You can also make up a meal cooking the rice in broth or stock like Martha said & then make up some meatballs add some tinned tomatoes or some fresh ones with some herbs etc have a play with it & it should come up great guns.
We live on a lot of mince here as we are often tight with money so even if you could grab some mince whether it be chicken or beef & make a few cheap meals that way.
But vegie rissottos are always a winner too !

Still reckon you can't go past Kisuri. Think of it as an indian risotto.
Finely chop half an onion and a clove of garlic, and sweat over a medium heat in a tablespoon of butter/oil. You don't want to brown them, just soften them a little.
Mix half and half rice and orange lentils (should also be really cheap - a few bucks a kilo in bulk), about a cup total per two people, along with about two and a half cups of water, and salt to taste, along with a tiny amount (1/4 tsp or less) of ground turmeric.
Bung the lid on, turn the and give it a good stir every few minutes. You want to aim for a risotto-like consistency - add more water if it needs it.
When it's done, throw a big slice of lemon in, and give it just a minute or two more.
That's it, you're done. A meal in itself, and great on a winter night.

We have rice alot, mainly fried rice with vegies/egg/bacon (whatever I've got, sometimes just carrots and peas) but try using the rice to make mince go further by putting it in rissoles (serve with more rice). Also look at ways to make things last longer, someone suggested buying some spuds, I think I read somewhere that an apple in with spuds stops them sprouting and going bad??? Someone may be able to confirm this.

We eat lots of rice too. I am Asian after all ;) You can have it with almost anything. All stir fries can be served with rice as a topping. Seen lots of good recipes here you can do. Simple stir fries for chicken, beef, seafood, veggies or a mixture...just heat some oil, put in sme crushed garlic and chopped onions then throw in whatever you like, mix some soy sauce, some lemon juice---Voila! Another type of sauce is made with oyster sauce, or Hossein sauce and sesame oil. You can never go wrong with stir fries---even salt and cracked pepper will do as seasonings! :)
chopped up onion and capsicums with tuna, seasoned with salt and pepper make a cheap easy meal served with rice, mix it all up. and add a touch of lemon.
My family often have steamed rice with Oyster sauce & soy... throw anything else in there too, bacon, a bag of frozen vegies:chef:

My family's favorite rice recipe:
1 cup rice, cooked
4 rashers bacon, chopped
1 400gm tin peeled chopped tomatoes
1/2 green capsicum diced
1 diced onion
grated cheese
Cook the rice.
Saute the bacon, onion and capsicum in a pan until the onion is clear.
Add the tomatoes and cooked rice to the pan, and stir through. Put mixture in a casserole dish, and sprinkle with grated cheese. Bake at 160C for about 20 minutes.

Keep them coming - I have another 5 weeks of no money to get through (and that means absolutely no money!)
I dont have a recipe to share but I do have an idea.
What about going to the Salvation Army or somewhere similiar and telling them about your situation. Its not always an easy thing to do to ask for help but you might get some something that could help. :)

rice is something that is always on our menu.
tuna and rice is a big hit, dice an onion, mix with the tuna and squeeze some fresh lemon on it, add cheese if u like.
or u can make tuna, with capsicum onion and zucchini, add one can of crushed tomatoes, 1/2 can water, simmer for bout 20 mins, serve on rice.
or when my hubby wants somethin really qk, he cooks rice and just melts some butter in it and adds cheese!:chef:
