Okay well for dinner tonight we are having rump steak.
For myself I am cooking pumpkin and mixed vegies.
DH and the boys won't eat the vegies so I am also cooking continental macaroni cheese.
Very boring and plain tonight.

But what else can I cook them?
I was going to do mashed potato but don't have any. :(

Is there anything I can make with rice or pasta?

Not an idea with rice or pasta, but you could add mashed potato to some veggies and lightly crumb and fry. Might be a good way to get veggies into them if that is what you would like to do.

If not, baked risotto type thing?

Hmm... trying to remember recipe I saw on 4 ingredients the other day...

I think it was soften some garlic and onion in a pan... add some rice, and some chicken stock.. cook in pan for few minutes, put it all in a casserole dish and put in oven...
Not sure for how long, but I imagine a moderate oven..

When you pull it out, it is supposed to be a really tasty savoury rice dish..

Sorry I can't remember specifics!

ETA: I imagine about a cup of rice, and then perhaps 1.5 -2 cups of stock?

Line a muffin tray with the pastry and crack an egg into each one, bake till egg is cooked, if you have bacon you could lay some of that down before cracking the egg in.

My kids would just eat steamed rice as it is, but you can add some soy sauce, a shallot some ham/bacon and whatever else you have and fry it up, like a fried rice (cold rice works best for fried rice though)

Puff pastry twists ; cut some strips of pastry spread lightly with Vegemite and grated cheese, twist a little and bake till golden...

Could you not process up some of the vegies up a bit and stick them in the mac cheese?

your kids need vegies!

packet pasta you can add also sorts of vegies to. you could mix mash pumpkin through it if trying to disguise the vegies. otherwise carrot, onion, broccoli, mushroom can all go in.

My kids only eat potato and corn, DS2 had pumpkin the other night so we are still encouraging that with him, we always ask if they want vegies, just a little bit and it usually turns into a tantrum.

I'm confused. May just be that by this time I'm tired already though.
Don't you hide the vegies at all? Just puree them and add them bit at a time, tasting to see if you can taste any as you go and try to offer them at each meal, encouraging along the way...
Its what we had to do with some of the kids at the child care centre I worked at. At least pureeing them you know they're getting some nutritional value, rather than carbs and protein with no vegies...
I ended up putting vegies in with fruit a few weeks ago, when bub wouldn't eat anything but fruit :rolleyes:
