View Full Version : Your best cupcake receipe
Hi girls,
I have my baby shower this weekend and want to make some cupcakes.
Now i know there are heaps online, but i thought i would ask here first cause then there tried and tested.
Also, the shower isnt until 1 pm sunday. But was thinking of baking the cupcakes on saturday afternoon and putting frosting on on sunday??. Is that alright?

Have a faboosh chocolate one, not really dense like mud, more like a chococolate lindt overload but still sponge like these are the ones I made with a ganache icing with fondant on top to look pretty (baby shower was girly) here. (http://www.flickr.com/photos/33122693@N04/3421019524/)
I made them for my friends baby shower recently, I made 100 for 40 people.. they were all eaten within a few hours?:p
Do have a good vanilla one too.;) lol I actually tweaked it off one I saw a guy do on Martha stewart, it was from a famous vanilla cupcake place in newyork - billys cupcakes?
Just let me know which one or both, I'm so disorganised in the brains right now I'll have to think to type it all out.
I think just a vanilla one as i want to put some pink frosting on top (everything is pink lol)

Makes about 30 cupcakes
1 3/4 cups cake flour, not self-rising (I use anchor brand plain cake flour from woolies, it gives the best fluffiest cupcakes)
1 1/4 cups unbleached all-purpose flour (just plain flour, although you can just easily use all cake flour or even all plain flour but they won't be quite as fluffy as the all purpose is higher protein where as the cake flour is really soft low protein)
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract
1. Preheat oven to 325°. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.
2. In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.
3. Divide batter evenly among liners, filling about two-thirds full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.
4. Transfer to a wire rack to cool completely. Repeat process with remaining batter. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with sprinkles, if desired. Serve at room temperature.
Vanilla Buttercream
1 cup (2 sticks) unsalted butter, room temperature
6 to 8 cups confectioners' sugar
1/2 cup milk
1 teaspoon pure vanilla bean paste or a a vanilla bean
1. In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 6 cups sugar, milk, and vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency.
These always come out perfectly for me, but do make sure you only bake 1 tray at once,
sometimes I just make half a batter and then mix the other half batter up while the first batch is baking so the baking powder doesn't rise too much, and also don't overfill or put too high in the oven as it has a lot of baking powder and can really rise A LOT - so if you want flat cupcakes only fill under half.:)

:chef: Cup Cakes
Makes 12
125g self-raising flour = 1 cup
125g caster sugar = 3/4 cup
125g soft unsalted butter = (buy a block and use the markings)
2 eggs
Half a teaspoon real vanilla extract
Approximately 2 tablespoons milk (i usually add alittle more)
Preheat the oven to 200C and line the tin with the muffin cases.
It couldn't be simpler to make cup cakes: just put all the ingredients except for the milk in the mixer and then blitz till smooth.
Pulse while adding milk.
I know it looks as if you'll never make this scant mixture fit 12 cupcakes cases, but you will. I promise you this mixture is exactly right to make the 12 cup cakes, so just spoon and scrape the stuff in, trying to fill each case equally, judging by eye only of course.
Put in the oven and bake for 15-20 minutes or until the cup cakes are cooked and golden on top. As soon as bearable, take the cup cakes in their cases out of the tin and let cool, right way up, on a wire rack.
Once they're cool, decorate as you wish.

Ohh could you please share the recipe for the chocolate ones. They sound delish :D

I'm pretty sure my recipe is exactly the same as MochaMumma!
They really are delicious! I made them for my best friends baby shower and they were a hit! Especially with butter cream icing!

It's actually a Nigella Lawson's recipe it's absolutley devine :cloud9:
Thanks for all the help lovely ladies. In the end someone put me on to coles brand vanila cake mix (67 cents a bag = 12 cupcakes) and some ready made betty crocker frosting with a sprinkle of fairy dust and they looked amazing. (and tasted even better)
