I'm hoping some of you lovely ladies might be able to help me out here. I have 2 tins of creamed corn in the back of my pantry and I'm at a loss as to what to do with them???

Do you have any ideas for me? Please throw your recipes my way :D

First thing that jumos to mind is easy chicken and corn soup

1pkt chicken noodle soup (low salt)...or you can use chicken stock
4 cups water
1-2 chicken breasts chopped
can of creamed corn
1 egg (beaten)
dash of soya sauce

Cook soup adding chicken breasts ( or you can used precooked breasts and put in towards the end) Simmer until chicken cooked. Add can of creamed corn. Bring to boil and as boiling pour in egg whilst stirring wth a folk, to cause egg threads. Then add a dash of soya sauce to taste. YUMO

I saw a fanicier version involving mushrooms, ginger and coconut flavoured evaporated milk tonight...on the back of a Carnation Coconut-Evaporated Milk tin.

not very creative but I always use it in either quiches or savoury muffins (corn, cheese and ham are YUM)

I used to hate corn now I live for it !!!

The standard chicken & corn soup or even a vegie soup .... A chicken stew or casserole !

Muffins etc !

Mmmm I am also thinking with lentils & some other vegies MmmmmmMMmmmMMmm !

I like the sound of the soup - I love soup :D

I could make a soup AND some muffins - I have 2 tins LOL.

I love cream corn it's really yummy in a breville toasted jaffle (not sure what other people call them).


:chef: Corn Fritters

3/4 Self raising flour
425g Creamed corn
1 Egg
Salt pepper

Stir everything together it all binds together nicely. I add sweet chilli sauce for flavour, or you could add basil or oregano instead. Fry in olive oil until gorgeously golden and crisp - we all love them here! You can use olive oil spray instead, but they don't come out so crispy.


:chef: Corn 'n' Cheese Potato

1 large potato
130g can creamed corn
3 tbs Grated cheese
1 tbs chives

Wrap potato in glad wrap and microwave on high for 4-6 minutes, or until tender.
heat corn for 2 minutes. Cut a cross in the potato add the corn then cheese and chives.

:chef: Mini Corn & Bacon Frittatas

2 eggs
125g can creamed corn
1/2cup cream
1/3 cup grated parmesan
1/4 cup semi-dried tomatoes, chopped
3 green onions, finely chopped
2 bacon rashers, trimmed, finely chopped
1 tbs chopped parsley

Preheat oven to moderate 180c grease 2 x 12 hole mini muffin pans. In a bowl, whisk together all ingredients. Season to taste. Pour mixture evenly into pans. Bake 10-15 mins or until firm. leave to cool in pan for 5 mions then trasfer to wire rack to cool completely. Store in airtight container in fridge until required.
