Hey, Im after a basic gluten free cake/muffin mix which I can add my own extras (choc chips, blueberrys, savoury etc) into please??
All the ones I've seen so far are made up with a heap of extras and can't be modified.
Thanks plenty if anyone has one I can use!! :)
I buy the basic Basco cake mix / muffin mix and add what I want to it

Yeah thats what i've done this time... but surely it would be cheaper to make one from scratch??
You could buy the gluten free packs of flours and use a normal recipe . . Ive done that too

Oops sorry can understand the confusion from my first post :laughing: thats what im actually after, a basic muffin recipie :o
Oh . . I thought you meant like a specific GF recipe . . I have a few will copy and paste!

Yup, basic muffin/cake recipie & needs to be gluten free too.
butter, for greasing the pan
220g self-raising flour (Substitute with Gluten Free SR Flour)
1/2 cup caster sugar
3/4 cup milk or buttermilk
1 egg
3/4 cup vegetable oil
1. Preheat oven to 180 degrees C, and grease muffin tin
2. Mix flour and caster sugar and any other dry ingredients (such as chocolate chips, nuts, spices, dried fruit)
3. In a seperate bowl, combine milk, eggs and oil and whisk together lightly. Add any additional wet ingredients you may wish (such as fresh berries, grated carrot or apple or mashed banana)
4. Make a well in the centre of the dry ingredients, pour in wet mixture and mix lightly together. Spoon into muffin tins and bake for 20-25 minutes, till lightly browned on top and a skewer inserted comes out clean.
5. Remove tins, turn out onto a wire rack, cool and consume.
