Hi all,

I would like to make my kids some healthy type snack food...& i thought lil veggie muffins was a good idea...but for the life of me i cant find a recipe...could anyone help me please?

I have a few savoury muffin recipies... (I think both recipes could be easily altered)

Savoury Muffins

2 cups self raising flour
1 cup of unprocessed bran
2 egg whites
1/3 apple sauce (in jar)
3/4 teaspoon bicarb soda
1/2 cup grated raw pumpkin
1/3 cup grated carrot
1/3 cup finely diced onion
1/3 cup of frozen peas
1/3 cup frozen corn kernels
1/3 cup of diced red capsicum
2 level tablespoons of parmesan cheese
1 x 200g tub natural yoghurt
Salt and Pepper to taste

Preheat oven to 200 degrees fan forced.
Coat a muffin tin with cooking spray.
In a large mixing bowl beat egg whites for 1 min using an electric beater.
Add bicarb soda to apple sauce (it will froth) then add to bowl.
Stir in all vegetables, yoghurt, parmesan, cheese, bran, salt and pepper and combine.
Gently fold flour into mixture in one go. Do not beat as this will make the muffins tough.
Spoon mixture evenly into 10 muffin cups. Bake for 20 mins or until firm to touch in the centre.
Allow muffins to sit for 5 mins in the pan.


Bacon and Fresh Herb muffins

6 bacon rashers, finely chopped
3 cups of self raising flour
60g butter
1 tablespoon coarsley chopped fresh basil
2 tablespoons of coarsley chopped fresh chives
2 teaspoons fo coarsley chopped fresh oregano
3/4 cup parmesan cheese
2 eggs beaten lightly
1 cup milk

Cook bacon in small frying pan until crisp. Drain on absorbant paper, cool.
Place flour in large bowl. Rub in butter.
Add bacon, herbs and cheese, then combined milk and eggs.
Mix using a fork until ingredients are just combined. Do not overmix.
the mixture should be coarse and lumpy.
Divide mixture into greased 12 hole muffin tin. Bake in moderately hot oven for 20 mins.
(can be kept in an airtight container for 2 days or frozen fro up to 2 months).

If you were wanting that recipe completely veggies you could subsitute the bacon for a cup of vegies. (eg. Grated zucchini, grated carrot, corn kernals, finely chopped red capsicum)

Oh and I think from memory that 1 tablespoon of fresh herbs is the equivalent to 1 teaspoon of dried herbs.

Ive found another one - looks really yummy (I think I'll try it out tomorrow! :D )

Cheesy Muffins

2 cups of self raising flour
1 cup of cheddar cheese, grated
1 carrot coarsely grated
125g can corn kernals, drained
1/2 cup frozen baby peas
1 cup fresh milk
1/4 cup olive oil
1 egg
120g ceddar cheese, cut into 12 cubes

Preheat oven to 200 degrees.
Grease a 12 hole muffin tin.
Sift flour into a large bowl and stir in grated cheese and vegetables.
Whisk milk, oil and egg together in a jug. Pour into flour mixture and mix together until just combined.
Spoon mixture evenly into the muffin tin.
Push a cube of cheese into each, making sure its covered with mixture.
Bake for 25 mins or until golden.

If you take a basic muffin/scone recipe.. you can add whatever grated/chopped veges you want into them.
I chop things that dont need cooking first ie: olives etc, and grate anything else ie: zucchini etc
Generally I just throw in about a cup of grated veges and a whatever looks right with chopped ones.,

We make -
sundried tomato, olives and basil.
zucchini and carrot
pumpkin (cook and mash first then add to the mix)
cheese and vegemite (trust me - it rocks)
cheese and ham/bacon

You can pretty much put whatever combos you want into them
