My daughter 21mth refuses to eat potato apart from chips. I made potato gems today and she loved them. All I did was boil and mash potato (nothing added to mash), then included some grated cheese. Made small balls and rolled them in bread crumbs then cooked in oven. The cheese did ooze a bit but she 4 of them in row and came looking for more.

Thats how I make my broccoli nuggest. I cook a bag of frozen broccoli, chop, add grated cheese, 1 egg, add enough bread crumbs to combine then roll in balls and bake on 200 for approx 15 minutes. Turning every so often.
Sometimes I add grated carrot or corn to the mix. I let the broccoli cool slightly before adding the egg and cheese so it doesnt melt too much before the oven and it makes them easy to roll.

I tried this with some egg to bind the potato and they turned out a little dry.
Has anyone got any suggestions to make them a bit more moist?
