Im going on a baking spree while i still have plenty of eggs. Things i already have in mind to bake are anzac bikkies, basic bikkies, ham and cheese muffins, maybe rice pudding, an every day choccie cake, gingerbread bikkies, mueslie bars and a basic muffin mix. The basic bikkie and muffins im adding to those so there not so bland. But just wondering if anyone has any other ideas for really simple recipes??? Most of these ones come from the book 4 ingredients so im not going all that fancy but really to the rest of the family i am;) so quick, easy but yummy are on my mind. And then hopefully if all goes well im going to whack em in the freezer for later on. So any other recipes or ideas would be greatly appreciated.TIA

I bake most weekends and I freeze everything. Including cakes (iced), slices, biscuits and muffins (it is a great idea to double the recipe, so you have plenty). All taste fine when defrosted and yes they should be ready to eat by morning tea. I wrap them individually in glad wrap and place cookies in clip seal bags.

It is a slightly diff recipe to ANZAC bikkies and IMO much nicer & soooooooo much easier (no saucepan required lol!).

:chef: ANZAC Slice

1 1/2 cups rolled oats
1 cup plain flour
1/2 cup SR flour
1 1/2 cups castor sugar
1 1/4 cups desiccated coconut
175g butter
2 tbs golden syrup
1/4 cup water

1Place rolled oats, flour, sugar and coconut in a large bowl. Add melted butter, syrup & water and mix well. Press mixture into a slice tray lined with baking paper (or buttered) Bake at 180 deg for 40 mins or until golden and firm. Cool in pan before cutting.

PS: The only slice tray I have is about 15cm x 30cm and it worked great nice and thick. I'd say the thinner you spread the mixture out the crunchier it would be!
