Has anyone got a yummy recipie for some sort of pesto pasta please??

mmmm yum!!! you can just boil some pasta and add pesto to it of course :P but here's my recipe off the top of my head...

fry chicken breast strips with a tablespoon of pesto. Put aside. Fry onion rings, bacon, capsicum, sundried tomatoes.. whatever you like. then add your chicken back. add a cup or so of cream and heaps of parmesan cheese. you can put more pesto in at this stage if you like.

Your pasta will be boiling at this stage (I use spaghetti or penne usually). in the last few minutes i throw in my greens - usually brocolli and/or snap peas. then drain it all and add to the chicken/mix

Serve straight away with some crusty bread and MORE parmesan cheese!!!!

I do a yummy chicken pesto pasta - cook some chopped up chicken and add a few spoons of pesto, some sour cream (or normal cream - whatever you have) and some chopped sun dried tomatoes. Keep on stove until heated through and a little thicker and then add cooked pasta. Sprinkle on some parmesan and black pepper.

Also, pesto chicken balls - mix some chicken mince, chopped sun dried tomatoes, some grated parmesan and a few spoons of pesto together. Shape into small balls with a teaspoon and then fry until browned and cooked through. Take out of pan and then make a simple tomato sauce - tin tomatoes, tomato paste, a few chopped sun dried tomatoes a dash of red wine and some italian herbs. Simmer for a few minutes until a little thicker and add the chicken balls back in to make sure they're heated thoroughly. Serve with spaghetti and parmesan.

Can it be done without cream? Or is it too dry without it?

I can't have cream and ill be using gluten free pasta. :rolleyes:

I do a pesto pasta salad - nice for lunch. Mix pesto and mayonaise together as the dressing and include avocado, sundried tomatos and toasted pine nuts. Could put chicken in there as well. I use a sundried tomato pesto
