I have a fridge full of vegies like sweet potato, pumpkin, zucchini, carrot, cauliflower etc. I want to make DD something a bit different for dinner than just vegies mashed together. Something like a vegetarian lasagna or something...

Anyone got any fab ideas of what I can do...???

I would make a vege lasagna out of them and what you could do it puree the cauliflower and make the white sauce with it...mmmm

I reckon cook em all up, mash em together and put a line of feta cheese or tasty cheese on the inside and bake them in little portions in filo or puff pastry!

If you got some of these veges::::

VEGO FILO ROLLS $2.60 per serve

INGREDIENTS


2 small zucchini, diced
300g potatoes, boiled, diced
½ cup chopped parsley
100g fetta, crumbled
1 red capsicum, diced
8 sheets filo pastry
50g butter, melted
rocket, to serve


METHOD

1. Preheat oven to 220°C. Cook zucchini for 4 minutes in a small saucepan of boiling, salted water, until softened. Drain well on paper towel. Combine zucchini with potato, parsley, fetta and capsicum in a medium-sized bowl. Season to taste.

2. Lightly oil four 11cm round pie dishes. Stack four filo sheets, brushing each sheet with melted butter. Halve sheets widthways. Repeat with four remaining sheets and butter. Place each stack in prepared dish, leaving excess pastry to hang over sides. Using scissors, trim pastry so it is 2cm wider than dish.

3. Spoon vegetable filling into pie dishes and cover with overhanging filo to create a top with a hole in its centre. Pinch pastry together and brush tops with butter. Bake for 15-20 minutes, until golden brown. Serve hot or at room temperature.

I make pasties from random veges. With that id prob puree the pumpkin and sweet potato, grate the zucchini and chop/boil the carrots so they are a bit lumpy. Could also add frozen peas/corn and/or cooked mince. Then just mix it up and fold into some pastry and bake til brown...

I mix of vegies made into patties and cooked. In the past they were generally made out of left over vegies.
