View Full Version : How do i cook silverside??

As the title says!
What do i do? and for how long? and does it matter if its frozen?
Any advice would be greatly appreciated!

It's really easy!

First of all, don't cook it from frozen.
If it's frozen, take it out of the freezer and let it defrost in the sink and it should be ready by the evening.

Stick it in a big pot and put in enough cold water so that the meat is covered.

Next you need to add your spices. This is what I use:

-about 4-8 whole peppercorns
-2 or 3 bay leaves
-teaspoon of brown sugar

Other people add vinegar, and a peeled onion with cloves stuck in it.

Then you just need to bring it to the boil, turn down the heat and simmer for ? hours per ??grams (i can't remember, so check the directions on the pack!).

When it's cooked, take it out and wrap it tightly in foil whilst you cook your vegies in the same water.

Yummy!

I cover with cold water
I put in 2-3 bay leaves.
brown malt vinegar
10 cloves
brown sugar
Bring to a boil then simmer I think its 40mins per 500gm but not sure.

Sorry not sure of quantities, i normally buy from coles and follow directions on pack. I dont put an onion in though, i dont think it makes it taste any diff, then there is a manky boiled onion to dispose of.

I have a friend who puts it in the pot and boils it for like 3 hours.... Mine is better though!

Plus have it with veges baked in home made cheese sauce :chef:... mmm now I want some! I might have to go and see if they have any at the shops once bub wakes up!

We do ours in the slow cooker these days but in the pot we'd cover it with water, add brown sugar and vinegar (these take some of the saltiness away), bring to the boil and simmer for around 6 hours. Sounds like a lot of time but the meat comes out so tender and moist. I'm not keen on silverside thats been cooked quicker because it can be tough.

Oh its really nice if you add a few onions and some carrots to the water. :) They are perfect! LOL

Cover with water, add a dash of vinegar, a good spoon of honey, a large roughly chopped onion, cloves, garlic, a couple of bay leaves, a spoon of mustard seeds.

Bring to the boil and let roughly simmer (just off the boil) for at least 1 hour/kg. You can't overcook corned beef, but you can undercook it.

Don't forget White Sauce, or mustard sauce.;)
