I have a whole lotta ripe bananas.. and little time to eat them.
Anyone have a yummy banana bread recipe? Or any yummy goodness recipe in which to use up a bunch of bananas?
And can you use ladyfinger bananas in it?
I remember maybe reading or hearing about having to use the bigger cavendish bananas for cooking? Will give it a go anyway I spose'

:chef: Banana Bread
1 1/2 cups plain flour
1 tsp baking powder
1 tsp bicarb soda
1/4 tsp salt
125g unsalted butter, softened
1 cup sugar
2 eggs, lightly beaten
2 large very ripe bananas
1/4 cup milk
Preheat oven to 170C. Grease a loaf tin and line the base and sides with baking paper.
Sift together the flour, baking powder, bicarb soda and salt.
In a separate bowl, beat the sugar and butter to 3-4 minutes or until pale and fluffy. Gradually add the beaten eggs, mixing well after each addition.
Mash the bananas with a fork and add to the butter mixture. Stir well to combine. Add the combined dry ingredients alternately with the milk, beating well after each addition.
Spoon the mixture into the prepared loaf tin and bake for 55-60 mins or until the top of the bread is firm and a deep brown colour. Allow to cool in the tin for 10 minutes before turning out onto a wire rack.

there was recipe posted on here ages ago that I have been using.. it's SOOO good! the best I have ever made for sure. :D It involves wrapping it in gladwrap as it cools.. I'll go have a hunt for you later
