View Full Version : Got a toddler who WONT eat veggies.. try these muffuns!!!

My son has been a nightmare with food since 6months of age. ALWAYS rejected veggies! I thought I would try these muffins today as they have cheese in them and he LOVES cheese. Becuase of this I put a slight bit more cheese in than the recipe states to make sure. and OMG he is scoffing them down!!! and so am I!!!! they're delish! I made them into mini muffins which made LOADS!

MIGHTY MUFFINS :chef:
makes 12, prep 15mins, cooking 20 (if making mini muffins only take 10-15 mins per batch)

2&1/2 cups self raising flour
1 medium carrot, grated
1 medium zucchini, grated
1 cup grated tasty cheese
2 eggs
1 cup milk
125g butter, melted and cooled

1) preheat oven to 200*C or 180*C if fan. Brush 12 large muffin cups with oil. Add carrot and zucchini together and lightly pat with paper towel to take out extra juice. Add cheese and sifted flour. Stir to combine and make well in centre.

2) whisk eggs, milk and butter in a jug. Add to the bowl and fold together until just combined; do not overbeat.

3) Spoon the mixture into prepared tins and bake for 20 mins (10-15 if mini muffins) or until risen and golden brown. Leave in the tin for 5 minutes, then lift out onto wire rack to cool.

TO FREEZE: wrap cooled muffins individually in foil then place into an airtight container or bag.

Yum, they sound nice. My kids are quite picky so I will make these and hopefully they like them. :thumbsup:

Anything to trick DS into eating more vegge!! Thank you for sharing, they look scrummy, I'm off to the shops!

Hi

I made these this morning as i needed something to throw in the school lunch boxes

they are mega tasty and even my fussy 10 yr old son has decided they are worthy to take to school

I think the secret to winning the kids ova is to serve them warm fresh from the oven first up as everything tastes best that way :yelclap:

All three of my kids loved these today, thanks for the recipe. I changed it a little bit i added some chives.... YUMMO

Try them with olive oil instead of the butter.

Better for them. Makes a really nice muffin too.

Each time dial back on the cheese too. they'll get accostomed to less if you do it gradually.

Have you tried veg fritters made on a corn base?

Blitz fresh corn in the food processor until liquid. Add enough flour and all the grated veg you want, a bit of cheese and some salt. Make a good batter texture.

Drop tablespoons full into a non stick frypan with a tbsp of olive oil in it.

i personally found corn to have a too strong taste and my son always picks it!

They sound delicious!!! I must try this recipe, DS hates vegies, however my Nan somehow got him drinking vegie juice since about 12 months of age and he still drinks it now!

I'll let you know how I go with these (i'm a terrible cook/baker. =P)

hey guys just an update... after these muffins being a hit with my son, I tried mashing
1 potato,
1 carrot and
1/3 of a medium zucchini
with cheese.
I then made a little bowl of grated cheese and put them both in front of my son. Got a spoonful of mash and let him put a little sprinkle of cheese on each spoonful...
HE SCOFFED the LOT!!!
Slowly over the last week I have reduced the amount of cheese in the mash til now there's nothing but the veggies in the mash and a small amount of cheese to sprinkle! He eats it so well!!! Loves the activity of doing it too.
Think the carrot and zucchini in the muffins must have adjusted his tastes so now he's eating veggies! Yay! :smiliedance:

I made these too and they were a huge hit! Then I made a second batch but added a can or creamed corn and some diced bacon, soooooooo good!!:chef:

I made these today too and DS1 loved them. He especially loved it because I let him help me stir the mixture.

Thanks for posting this! I only saw this thread at 3pm this afternoon just before I had to head out to buy some milk so picked up a zucchini in the process, made them as soon as I got home and got my non-veg-eating DS of 4.5 to try them! He couldnt stop!! :yelclap:

I made 2 batches, 6 with just cheese mixed into it, and 6 with the carrots and zucchini - mainly because limited-veg-eating DH wouldnt have eaten them otherwise as he would have been very suspicious of the green and orange. :rolleyes:
