Our meat bill is getting quite expensive so I'm looking at just vegetable meals.

Does anyone have recipes for dinners without meat?

Lentil Bolognese

1 Tbs oil
1 onion, chopped
1 carrot, chopped
4 mushrooms, chopped
some peas and corn
1 stalk celery
1 can lentils, drained
1/2 cup tomato sauce
1 tsp Italian herbs
salt and pepper to taste
Cooked spaghetti
grated cheese

In a frypan in a tablespoon of oil, cook onion. When onion is cooked add rest of veggies. Cook for about five minutes. Add lentils, tomato sauce, salt, pepper, herbs. Cook 10 mins.

Ready to serve with cooked pasta and top with grated cheese.

Kidney bean Tacos/Enchiladas

Packet of Tacos or Enchiladas, Burritos
1 jar taco sauce
1 - 2 cans of kidney beans ,drained - don't need the refried beans - ordinary kidney beans taste great and a lot cheaper
1 packet of taco seasoning
(can make your own taco seasoning and keep in a jar )
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp oregano
1/2 tsp paprika
1 1/2 tsp cumin
1 tsp salt
1 tsp black pepper
1/4 tsp crushed red pepper flakes (if you want some heat)

In a saucepan, put in kidney beans, add a few tablespoons of taco sauce, a tsp or so of taco seasoning - put in as much as you like. Cook for about 10 mins. You can mash the beans if you like with a potato masher, or keep them whole.

serve with taco/enchilada/burrito. Add some salad - chopped lettuce, tomato and capsicum is nice. Top with grated cheese, and taco sauce. If you like you can be a bit naughty and add a few dollops of sour cream - mmmm.

:iagree: You can pretty much sustitute lentils or beans for any mince dish. My hubby always complains if there's no meat, except for dishes with mexican beans.

Another good one is san choy bau (sp?). I use lentils, bean sprouts, diced/grated onion, carrots, zucchini, fry with oyster sauce, wrap in lettuce leaves.
Quick, easy and cheap!

I recently made a similar thing which was a lentil bolognese sauce wrapped in blanched cabbaged leaves. Mashed spuds on the side. Nice hearty dish for winter.

Oh and another tip is if there's leftover taco or bolognese sauce, but not enough for another full meal, you can use it to stuff capsicums or mushrooms.

Spaghetti sauces made without mince...
