hi there
whats the best way to cook scallops (seafood). I have people coming tomorrow and i thought it would be a change from prawns. I dont know what to do with them!
I want some relatively simple and easy recipies, without too many ingredients that will take me hundreds of bucks to get!
Can you help please?

I just throw them in a REALLY REALLY hot pan with a small amount of oil and sear for 30 seconds or so each side.
I make a nice risotto and stir some scallops and prawns through right at the end.. put a few on top.
My fave restaurant of all time has a scallop dish I try to do at home, I think it was seared scallops on a cauliflower puree with crispy proscuitto, so yum.
I just marinate them in sweet chilli sauce, lime rind, lime juice, fresh ginger and fresh coriander, then BBQ them (or a fry pan would work too). Very yummy. Don't let them sit in the marinade for longer than 2 hours though because the lime juice will start to pickle them a bit.
Alternatively, chop up some chorizo sausage into thin slices, pan fry that (without oil, it will release it's own oil) and then pan fry the scallops in the oil, squeeze of lemon juice, fresh parsley, serve with crusty bread.
