I have never made vol-au-vents before as I hate tuna, but I am not going to be home for Dinner good friday and have to leave something for DH and the FIL to have for dinner- thought Tuna Vol-au-vents would be a good option....

So does anyone have a simple recipe I can use? I have scoured my books and the netand can't really find anything simple!!!!

Make up a Tuna Mornay - it's basically just white sauce with cheese and tuna. You can put in some vegies too if you like.

Fry up some finely chopped celery and onion until just soft. Add tin of tuna, a half a can of corn kernels and plenty of cream. I also add a small vege stock cube for flavour but you could leave that out. Once hot, add some grated cheese, stir until melted. Add some plain flour or corn flour to thicken if it's too thin.

Blind bake your vol au vents, then add your hot filling. Very yummy!

Hi there

As Tasma said, just make up a white sauce, add some grated chees, salt and pepper, and some drained tuna, even peas and corn if you like.

Good Friday I know you don't eat meat - but you could also do a basic white sauce and split it up into two, and do two different mixtures IYKWIM ? You could put tuna in one, and perhaps make the other one a vege one like spinach and fetta, or even put spinach and fetta into some puff pastry and bake it, it's really yummy !! Have this with some salad and crusty bread.

Another thing I like to make is fish fillet burgers. Just buy some frozen crumbed fish fillets and cook them in the oven, warm up some hamburger buns. Add the fish fillets, some mayo, tomato and lettuce, salt and pepper, have with some chips.

Or even some soup - like vege or pumpkin soup is another meat free alternative ?

Good luck !!

Thank you so much ladies for the prompt replies!!

I am off to the supermarket now so you've been an enormous help!

Mellymoo- already going to do fish burgers for lunch- yummo!!!!

But the idea of adding spinach/fetta- great idea for me, as I don't eat tuna, and can take them to work with me- HUGE help!! :goodvibes:

Thanks! :flowerz:
