Porridge is. :) Like rolled oats.

Most whole grains and lentils and veggies are so maybe have a look at veggie packed meals?
I believe fish is also good too, but don't hold me to it I may be wrong.

The Symply Too Good To Be True (Annette Sym) cookbooks are good.

Mostly low GI and simple every day type meals. Low GI versions of heaps of meals. I got mine from the newsagents for $12.95 each. There are 5 different book's out.

When I was diagnosed with Gestational Diabetes (and suggested to follow low GI diet) I took out the "diabetic cookbook" from the library - big thick book - I tried out the Vegetable Moussaka recipe - it was fantastic and easy to do.
