I am wondering if anyone has a good, reliable vegetarian burger/pattie recipe?
...preferably something made with chickpeas or lentils.:fingerscrossed:

Mini lentil patties
1/4 cup red lentils
200g coarsly chopped kumara
2 tlbs finely chopped celery
1/4 cup coarsly grated apple
1/2 clove crushed garlic
1/4 cup stale breadcrumbs
1/2 cup packaged breadcrumbs
Add lentils to a large pan of boiling water, boil, uncovered about 10 mins or until tender, drain. Meanwhile boil or microwave kumara until tender, drain and mash.
Combine lentils and kumara in bowl with celery, apple, garlic and breadcrumbs; shape tablespoons of mixture into patties. Coat patties in packaged breadcrumbs; place on oiled oven tray.
Bake in moderate oven 15mins or until patties are lightly browned.
These make 16 tiny patties.

I'm sure they would be fine on burgers. Just make them bigger and not too mushy.
I also found they were better turned over after about 15mins and cooked for longer.
They are yummy and even good for babies to eat.
Have fun cooking!
Here is my recipe:
1 can chickpeas
grated vegies to make a total of four cups (eg potato, sweet potato, mushrooms, carrot, zuchinni, onion etc)
breadcrumbs (enough to bind the mix)
Mix altogether and form into burgers. Cook in a little olive oil til golden and cooked through. Serve on bun with salad and sweet chilli sauce. Makes about 6 patties. You can freeze any leftover mix but will need to add more breadcrumbs when you defrost as it can get kind of soggy.
My daughter used to love these when she ate no other form of vegie... boiled, steamed etc
Enjoy!
