View Full Version : Urgent! Coles Baby Recipes Required

Oh it's drama! I went to coles this arvo and got all the ingredients for the Hearty Meat Pie and Chicken & Basil Pasta Bake from the current coles baby mag but the recipes got left behind in the trolley. So my question is does anyone have these and could post them for me?? I was going to make the pie tonight and the pasta tomorrow. I have all the ingredients sitting in my kitchen but no clue what to do with them :confused:

Ok i have them

Chicken and Basil Pasta Bake
Olive Oil
2 Spring Onions, sliced
1 green capsicum seeded and sliced
6 basil leaves, torn
100g mushrooms sliced
1 chicken breast, sliced
100g butter
100g plain flour
3 cups milk
150g cheddar cheese, grated
2 litres water
200g small spiral pasta

Preheat oven to 180c and grease a 20cm baking dish. heat some oil in a pan and saute spring onions,capsicum and basil over medium heat for five mins. add mushrooms and cool for a further three minutes, until soft. Transfer to baking dish. return the pan to a medium head, add chicken and cook for 10 mins. Add chicken to Vegetables.

Slowly melt butter in a large saucapan, and then stir in flour with a a wooden spoon.

Once combined cook over a low heat for 2 mins. slowly whick in the milk to produce a smooth white sauce.

add 50g of cheese and stif through.

meanwhile bring water to a boil in a large saucepan with a drop of olive oil and add the pasta. cook for 10 mins stirring occasionally, unitl al dente.

Drain pasta, and the combine it with chicken and vegetables. pour over sause and stir through. top the mixture with the remaining cheese and bake uncovered for 30 mins.

Hearty Beef Pie

olive oil
250g fillet steak, sliced
100g sweet potato, peeled and diced
1 small carrot, peeled and diced
50g mushrooms, diced
120g butter
1/2 cup plain flour
2 cups salt reduced beef stock
1 cup canned crushed tomatoes
1 1/2 sheets puff pastry

Preheat oven to 180 and grease a 20cm square casserole dish.
Heat large fry pan and cook the steak over medium heat for 5mins. Remove and set aside.
Add some olive oil to the pan and saute sweet potato and carrot over medium heat for 10 mins. add mushrooms and cook for a futher 3 mins. remove from heat and combine with steak.

slowly melt 100g of butt in a large saucepan and then stiir in flour with a wooder spoon. cook over a medium heat stirring constantly until the mixture starts to turn golden brown.

slowly whish in stock to produce a smooth brown sauce. Reduce heat and allow sauce to thicken. add tomatoes, steak and vege and cook gently for 5mins.

transfer contents to the casserole dish and top with a sheet of pastry. use remaining pastry to decorate with shapes/names. melth the rest of the butter and brush over pastry.

bake for 30mins until pastry is golden brown.
