I have a big gross lump of meat in the fridge that I suppose I should cook :yes:
What is the nicest way to cook corned beef? I will probably make a cheese sauce I guess but what should I season the meat with and how long should I cook it etc?

My Nanna used to cook it in a pot with a lid filled with water, then about half way though cooking it change the water so the meat doesn’t get too salty. She would cook it about 45min, but that does depend on the size
I do it in a pot my mother gave me- it has a fitted lid and steam valve- sound shocking but I am not sure what the type of pot is called. I do it for about 40min, just stick a knife thorugh it to see if it is ready.

Boil it with vegies (very yummy and very easy). Just cover the meat with water (just enought to cover it). Add some bay leaves, a bit of worcestershire sauce, some brown sugar, red wine vinegar and a whole peeled onion. Bring it all to the boil and then simmer covered for 40mins per 500g. It is really yummy and you just add your veg (potatoes, beans, carrots are best) at the appropriate times to cook them (ie potatoes about 45 mins, carrots 30 mins and beans 20 mins etc). You don't even need to make a white sauce as it is delicious with hot english mustard or horseradish cream. It is always best with a great peice of meat to begin with. I have had some that are tasteless at times. Good luck!

You can cook it in a slow cooker. It is the same ingredients and amount of water just do it on high for 2 hours (depending on the size of the meat) and then for a few more hours on low. I have done it on low for 8 hours and the 1.5kg piece didn't cook through.

Thanks! I might do it in the saucepan today and try the slow cooker next time when I have more time :thumbsup:
mines always done in the slow cooker. On high for about 4-5 hrs is perfect. I cover with water and add a tiny splash of vinegar.

yes you can use a slow-cooker - but I never have.
You don't need to change the water these days as the pickling process has changed over the years and they now use a low salt pickling method
I cover the meat with water and add Bay leaves, a spoon of garlic, a teaspoon sea salt, a large chopped onion, a dozen cloves, peppercorns, a sprig of rosemary, a good tablespoon of honey and a good dash of vinegar, a large spoon of mustard grains
Bring to the boil and simmer for one hour per kilo of meat. You can't over cook corn beef, but undercooked is :barf:
It's one of these meats that you can toss in nearly any herb/flavouring/sauce etc. Be wary of too many salty additives though as it can then become salty.
I toss in a large carrot roughly chopped about 20 minutes or so before it's due to be finished.
Mustard Cheese sauce - make up the cheese sauce using some of the liquid from the meat instead of milk, and add a large teaspoon of honey mustard and a small teaspoon of honey.

I cook mine with celery, carrot, peeled onion studded with 6 cloves, 2 bay leaves, a few peppercorns and a whole clove of garlic cut in half. I think I found the recipe on www.taste.com.au

I've never heard of throwing things in it though. I always just fill it with water, bring to the boil and then simmer.... for HOURS.... like minimum 6-7 (for about 1.5 kgs worth).
I serve with mash, vegies and cheese sauce! Yum yum! :chef:
Oh and I completely agree with WCM.... you can't over cook it.... but under cooked... it's like slimy and gooey and just yuk! :barf: It's how DP served it up last time... and I just could not eat it! So the longer in the pot, the better! :thumbsup:

OMGosh, i nearly passed out from the grossness of it though.....when it slid out of its vacu-packed wrapper and into the sink, it reminded me EXACTLY of delievering a placenta :laughing::barf:
In pot or slow cooker.
I add a dash of vinegar, a bay leaf a few peppercorns and a tbsp brown sugar.
Then I serve it with a thick white sauce with heaps of parsley in it.
Lots of Mashed potatoes and cabbage cooked in the same water as the meat.
My Favorite comfort food! :o

i used the slow cooker, oh my god it was the best tasting.. i put it on before i went to bed at about 8.30 i guess and dp turned it off at about 4.30am n left it there til i got up at about 7.. oh it was so yummy.. i just added water to cover it and some vinegar and cooked it on low... oh n i added some brown sugar...

instead of water DH likes to use ginger beer. It gives a great taste through the meat. I'm not a massive fan of ginger so I don't use it every time. I've also heard of people using orange juice with a few spoons of seeded mustard.
Personally my favourite is water with some vinegar, brown sugar and some bay leaves.

I cook it in the slowcooker :) I put the corned beef in, then pour in a 2L bottle of ginger ale and cook on high for 6 hours :D It tastes amazing! It's the only way my family like corned beef now :D

Usually if you do it in a saucepan you don't need to take it out of the plastic bag - there are directions on the package.
We use the slow cooker mostly these days. Also, in the slow cooker there is no need to cover the meat with water. A few cups is all that's needed. I think last time we added a cut up orange, brown sugar and vinegar. Was delish! About 6 hours is usually enough.
And I cheat and buy the "just add boiling water" white sauce mix. :o

I make white/cheese sauce aswell..yummy!
I boil 1.5-2kg cornbeef for about 2hours on low meduim heat in redwine vinigar and about two tablespoons of brown sugar...

I have one is the slow cooker now. I covered with hot water, added a splash of vinegar. A teaspoon of mustard, parsley, thyme, whole peppercorn, salt. And a diced onion.
