Hi girls
I was wondering if anyone had a great rice cream recipe that they would like to share with me please because its a favourite in our house and i'd like to make it myself rather than buy it off the shelf coz i'm sure this way it would stretch alot further.

1 cup water
1/2 cup short grain or medium grain rice
4 cups milk
pinch of salt
1tbls custard powder
2tbls cold milk
3 tbls sugar
ground nutmeg
Bring water to boil and add rice - stir until boiling then simmer until the water is absorbed
Add milk and salt, stir well and leave over a moderate heat until it boils
Reduce to simmer for 25-30mins stirring occasionally
Mix custard powder with milk and stir in half a cup of the rice mix then pour back into the saucepan
Add sugar and cook until it bubbles gently
Remove from heat and pour into a heat proof dish - sprinkle with nutmeg

when I want a really decadent one I make this recipe
1 1/2 cup of short grain rice
3 cups water
1 can of evaporated milk
1 can of condensed milk
Small amount of ground cinnamon
Small amount of ground star anise
1 spoon vanilla essence
Wash the rice and put over a medium heat for about 20 minutes until the rice is soft.
In a separate pan, boil about 1 cup of water with the cinnamon and star anise so that the water is flavoured, and then run the water through a really fine sieve so that the "particles" are removed from the water.
Add the condensed and evaporated milk slowly, as well as the flavoured water and vanilla.
If the mixture is too watery, increase the heat. It should be smooth but not excessively watery.
or a more basic one
1 Litre(4 cups) Full cream Milk
1/2 cup Sugar
1/2 cup short grain rice(I love aborio rice for this)
1 teaspoon vanilla essence
Combine milk & sugar and bring to boil in saucepan stirring.Gradually stir in rice to boiling milk.Cover pan tightly and simmer over low heat stirring occasionally for about 1 hour or until rice is tender and most of liquid is absorbed. Stir in essence.Serve warm or cold

I don't actually have a recipe but I make it heaps as I just love it.
So just work out your own measurements but I'll tell you what I put in mine.
Medium Grain Rice
Full Cream Milk
Water
Knob of Butter
Tblspoon sugar
Fill a medium pot with Full cream milk and add about a cup of water with the milk too.
Just when the milk is starting (but don't let it boil) to boil - add about 7 tablespoons (just use big cutlery spoons) of Medium Grain rice - I use Sun Rice.
Stir very regularly about every 5 -10 mins until becomes thick and rice is cooked.
Takes about 40 mins I think.
When stopped cooking and turned heat off - stir though a knob of butter and a spoon of sugar.
Serves about 3 or 4
Serve with cinnamon sugar and O.M.G. :goodvibes:
* I usually put way too much rice or not enough milk so I'm usually adding more milk towards the end of cooking process to keep that creaminess up.
