Hi,

Some good friends are suddenly coming for dinner tomorrow night and I know they would be happy with the spag bol I was planning I really feel like cooking something a bit nicer for them!!! But........can't come up with any good ideas ......

anybody?????? Nobody here is fussy - can be anything meat/fish/bbq. I am an alright cook but will be trying to prepare things with 3 kids as DH has to work tomorrow.

How about Lasagne and a nice salad and garlic bread?

chicken wraps are easy...

I usually do a roast if we have guests for tea:)
You can precut the vegies and leave them in some water. The meat just cooks away, chuck the vegies on and steam some peas/corn closer to serving. Easy and you don't have to do much whilst your guests are there which is good.

We do salmon, either in the oven or on the BBQ.

Buy salmon fillet or steaks if you prefer. Squeeze a bit of lemon or lime juice over the top of them, and wrap them in alfoil with a slice of lime (or lemon) and a sprig of fresh dill. Fish will steam (broil, whatever) itself beautifully in about 20 minutes, and the flavour is devine.

Would probably work with other fish too, but we just like salmon!

You can eat it with standard veges, a salad, or noodles ... anything, really!

You've already had the dinner but here's a few good recipe ideas for next time - fuss free and always impressive guests:

on a plate put mashed potatoes on bottom, spoon some boiled steamed veggies on top - i usually do carrots sliced on an angle, asparagus and broccolini or whatever you like really, pan fried chicken breast (cut in half so not too thick) and just seasoned with lemon pepper seasoning, put some chopped marinated capsicum on top of the stack then drizzle over or around the plate balsamic glaze (you can buy a bottle in supermarket instead of making). Healthy, quick, and delicious and looks restaurantish!

Otherwise Mexican lasagna (let me know if you want recipe) using taco mix, baby spinach between layers, tortillas instead of lasagna sheets add veggies to taco mix if you want - red caps, corn etc. and top with sour cream and or guacamole
