I have two chicken breasts and looking for something "different" but yet healthy to cook for my hubby for dinner.
I will be heading to shops, so ingredients are no issue.
I want it to be romantic candle lit dinner, so nothing to heavy;)

Oh I have the perfect thing. :)
Good quality Balsamic Vinegar
Bunch of Flat Leaf Parsley
Potato for mashing with butter and cream (for extra special creaminess)
Baby Spinach
Pan fry the chicken breasts, splash in the balsamic vinegar and chopped parsley
Serve on a bed of wilted spinach and mashed potato. :D
Its VERY nice!
ooh you could stuff with cheese, mushies and tomatoes or olives or ham - whatever tickles ya fancy.... hold together with toothpicks, crumb it and cook it then take out the toothpicks - yum! oh last time i made these, i put cheese, tomato and ham inside and made mushie sauce to pour on top... very nice. :)

It doesn't HAVE to be healthy...
Maybe you could do a shredded chicken and green veg carbonara.
Light cooking cream or evaporated milk with onion, bacon (if you want it), parmesan cheese and some fresh fettucine.
Then you can also pack it with crunchy greens too like broccoli, asparagus, snow peas etc. :)
The best of both worlds, plus, green veggies are supposed to be a kind of aphrodisiac. ;)

Easy then hun.. It's one of my favourite chicken dishes!
You can get packet mixes from Continental.... Creamy Chicken and vegetables.
It ias scrumptious! Has heaps of vegies and pasta in it... and I always add more than it says! and serve it with garlic bread! Gah it's sooooo yummy! :yes:

my fav chicken pasta is slice up chiken into 'chunks' pan fry in olive oil and garlic til browned, take chicken out and set aside, add sliced mushrooms and brown, add ahalf a cup or so of white wine (is very yummy but if you don't want to buy a bottle use chicken stock), bubble away until mushies are nicely cooked, add cream and simmer quite high until cream thickens... at the last minute add chopped herbs (my fav are parsley and basil) and toss sauce through hot drained pasta. Oh don't forget to add salt and lots of black pepper too
