Hi all,

been googling for a while and haven't come up with anything so I thought I'd ask the collective wisdom on the hubbers :)

Does anyone have a recipe for lemon slice that uses lemon curd? or any other ideas for using lemon curd (preferably in a single serve something.. ie, to have for morning tea)

also.. I'd love to hear any other easy 'bring a plate' kind of recipe. Think mothers group morning tea (for mums not so much for bubs)

Tarts are easy.

If you wanted to be fancy though you could make some mini meringues to go on top. :yes:

I was just about to suggest tarts. Hold that thought I will try and find my recipe.

1 1/4 cups plain flour
1/3 cup icing sugar
1/4 almond meal
125 chopped butter
1 egg yolk

Process flour, icing sugar, almond meal and butter until crumbly. Add egg yolk; process until they just come together. Knead dough until smooth. Wrap in glad wrap and pop in the fridge for 30 mins.
Roll pastry between 2 sheets of baking paper. Ease into tin/s cover and refrigerate for 30 mins.
preheat oven 180 deg
Line pastry with baking paper then fill with dried beans or uncooked rice. Bake for 10 mins
Remove beans/rice and paper.
Pour lemon filling into pastry shell and bake for 40 mins or until filling sets. stand for 10 mins then refrigerate till cold.

I had a most yummy lemon curd Friand on the weekend.

you could do this with a plain cupcake mix too.

Mix up a plain friand or cupcake batter. add a touch of lemon juice or lemon butter

Put a spoonful of batter in the bottom of the patty pan, then a teaspoon of lemon butter. More batter then another spoon of lemon butter on top and cook as per normal!

They were delish!
