I was thinking of making biscuits tomorrow. Does anyone have some yummy tried and tested reciepes. I usually use a packet mix but i might make some from scratch tomorrow

I LOVE this chocolate chip cookie recipe :) it makes heaps though!
Chocolate Chip Cookies (3)
Ingredients
3/4 c Granulated sugar
1 c Brown sugar
1 c Butter
1 tb Vanilla
2 Eggs, slightly beaten
3 c Flour
3/4 ts Baking soda
3/4 ts Salt
3 c Semi-sweet chocolate chips
1 c Chopped nuts (optional)
Directions
Preheat oven to 350 degrees F. In a large bowl, combine sugars; add in butter and cream together with the sugar. Add vanilla and eggs; mix together. In a separate bowl sift together the flour, baking soda, and salt and add to the creamed mixture. Mix well; the dough will be stiff. Add the chocolate chips and nuts (if using). Line the cookie sheets with baking parchment or wax paper. Drop dough with a small ice cream scoop onto the sheets. Bake 10-12 minutes at 350 degrees F. Remove from oven and cool on wire racks.
This is really easy.
Peanut Butter Biscuits
1 Cup Peanut Butter
1 Cup Caster Sugar
1 Egg
Mix all together, spoon teaspoons full onto tray and bake at 170 degrees for 10-15 minutes.:)

A recipe my MIL uses all the time (and I use when I decide I'll bake rather than buy!!!)
Ingredients:-
1/2 cup margarine (125 gms)
1 tsp vanilla
1/4 cup brown sugar
1/2 cup sugar
1 egg (beaten)
1 1/4 cup SR flour
1/2 tsp salt
Method:-
Cream butter, vanilla and sugars. Add egg and beat well. Stir in sifted dry ingredients. Drop tspn of mix on greased/papered tray & bake for approx 12mins on 190 degrees oven.
These are the plain version, however you can use your imagination here ...
* stir thru the baking chops chips in the mix (brown or white);
* or my latest fav - M&M's :chef:;
* put a couple of choc chips on the top prior to baking;
* stir thru or put on top 100's & 1000's or sultanas etc.
You really are only limited by your imagination. Enjoy!!!:chef:
