View Full Version : Roast pork- help!!! Good cooks I need you!!! URGENTLY

Hi there

DH usually cooks our pork and of course, he's been called into work! :rolleyes:

So rather than wait for dinner at 8pm when he gets home- id rather have a go at it myself.

So- how do i prepare it (its already tied- its like a rolled one i think) but how do i do it so that i can get the crackling right?

We dont have the money for maccas this week in case i get it wrong!

I turn my oven up to the max.

Rub Olive Oil (or whatever you have) over the pork. Then lots of salt (rub it in) and Lemon Juice.

Cook it really high for 1/2 and then I reduce it to 180 for about 1.5 hours - depending on the size.

My crackling always turns out this way and the pork is really tender and yummy.

I wish I was having pork tonight now:laughing:

Thanks Nae- so do i need to cut the pork before i put the oil on it? And how much do i use?

Well the pork I buy is usually scored. But you should run your knife over the pork as this is how it crackles the best.

I just pour a little oil, then rub with my hands. Doesn't matter if it looks like you have put to much on - as the salt needs it and the lemon juice does also.

High for 1/2 hour first only.. I just said 1/2 in my previous post..didn't want to:confused: you, as I confused myself when I read it back.

I do it the same as everyone else except at the end I slice off the crackle from the roast and put the crackle back in the oven for a bit longer with the grill thing turned on. It gets nice and crunchy but you have to watch that it doesnt burn!
