I am not a very big sandwich person and find myself reaching for something naughty because I don't have any good lunch ideas. Any suggestions?? I try and eat low fat.

Cruskits with weight watchers cottage cheese, tuna, sliced tomato, salt and pepper
Potato stuffed with ham, pineapple, corn, topped with low fat cheese and light sour cream
Mini-pizzas made on a pita bread base
Soup.
That's all I can think of right now:)

I make this one for my Dp.. he loves it.
Mexican Tuna salad.
I can of tuna (225g),
Juice of one lime,
about half a chilli chopped up.
1/3 cup or corriander (fresh).
1 tomatoe chopped up.
Mix it together with a fork and stick it on top of some lettuce.
Very quick and tasty.

Do you make soup? I love soup and make a couple of batches a week. I freeze it in small containers that I can just pull out of the freezer and heat. MMmmmmm...:chef:
Sometimes I will heat up in the oven a few of those frozen vegetable spring rolls and have some salad with them. I also buy the boxed salads from Coles as I am too lazy to chop everything up just for myself.
Alternatively I sometimes have a low fat hotdog frankfurt on some bread with some hot dog relish on top with a side salad, my favourite salad is the crisp asian green one. It is yummo.
I also buy Mrs Crockett's pumpkin and pistachio risotto from Coles. It is low fat and I get two lunches out of one container. Once heated I always top with parmesan cheese and cracked black pepper.
I sometimes also have dips like tazeki (sp?) and hommus again I buy premade and have them with some pretzels and carrot sticks or turkish bread.

I will endeavour to try some of these delicious ideas and hopefully it will prevent me from eating naughty food.

have you ever brought the little Womens Weekly cook book they are only a couple of $$ and both have lunch books.
Just thought I would share this recipe I made for lunch today it was delicious.
Turkish Bread sliced down the middle
1 truss tomato
boccini cheese sliced down the middle
fresh basil leaves
olive oil
salt and pepper to season
1 garlic clove (optional)
dice up tomato and put in a small bowl and slice up some basil leaves throw them in. Add salt and pepper then drizzle some olive oil on top and set aside for the flavours to develop (about 15 mins).
Spray bread with olive oil cooking spray and grill the underside of the bread and if you are going to use the garlic rub into grilled bread. Turn bread over spray with olive oil and put the boccini on top then grill till melted then remove from grill and top with tomato mixture and this a one tasty lunch:yes:
