I am after a microwaveable rice pudding recipe that dosn't use instant rice or a pudding mix or eggs in it.

Actually an oven recipe would be good too but am really after a microwaveable one at the moment cause my oven is dead! Meant to be fixed today but it could be I will believe that when I see it!

My Granny makes the best rice pudding ever, but Im not sure of the exact measurements or anything. Basically its just cooked rice, a can of sweetened condensed milk, and milk! You can add nutmeg if you like, but we dont usually. She then bakes it in the oven until its all heated through.
I suppose you could easily cook it in the microwave too.
Its a very simple recipe but its delicious! :chef:

Ive just found another recipe here which seems easy enough.

1/4 cup short grain rice
1 2/3 cups milk
1 1/2 tablespoons caster sugar
3/4 cup cream
1/4 teaspoon vanilla essence
1/4 teaspoon nutmeg.

1. Preheat oven to 150 degrees. Grease a 1 litre ovenproof dish.
2. Place the rice, milk, sugar, cream and vanilla essence in a bowl and mix together. Pour into the greased dish. Dust the surface with nutmeg.
3. Bake for 2 hours, by which time the rice should have absorbed most of the milk and will have become creamy in texture with a brown skin on top.
Serve hot! Yummo! :chef:
(I think you could easily transfer this recipe to the microwave. Id do everything the same except for the cooking time - obviously it will be quicker in the microwave).

Oh gosh......... I feel like this now! What have you done!!!!! :eek: :D

And here's another..........

15g butter
½ cup (100g) short-grain rice
2½ cups (625ml) milk
1 cup (250ml) cream
¼ cup caster sugar
Pinch salt
1 teaspoon vanilla extract
Freshly grated nutmeg




Preheat oven to 160°C / 140°C fan-forced.

Melt butter in a medium saucepan over medium heat. Add rice and cook, stirring 1 minute to coat rice with butter.

Add milk, cream, sugar and salt and bring just to a boil.

Pour rice and milk mixture into 1.5 litre baking dish; stir in vanilla.

Place dish in a larger baking dish and pour boiling water into larger dish to come half way up the sides of the rice pudding.

Grate fresh nutmeg over surface of rice pudding and transfer to preheated oven. Bake 1½ to 2 hours, stirring every 30 minutes.

I just make a quick version.....boil some arborio rice in the microwave like you would normally cook rice....probably need to keep adding some water as it absorbs a lot....when its cooked just add milk sugar vanilla and then cook it again....voila!! quick rice pudding

Well I microwaved the recipe and omitted the salt and cream and instead added a can of evaporated milk! Tastes sooooo good!:chef:
