Hey guys,
I am after a recipe for the type of cookie dough that you can roll with a rolling pin and use cookie cutters with? The cookie recipes i can find are those that you roll in a ball...

Well, I've got a honey one.

100 g butter
3/4 cup sugar
3 tbsp honey
1 tsp baking soda
2 eggs

3 1/2 - 3 2/3 cups plain flour

Mix everything except the flour and butter in a small saucepan. Add the butter (in one piece is OK as it going to melt anyway). Put the saucepan over a bigger pan of simmering water. Stir until butter has melted and light-yellow foam is formed on top. Take off the stove and let cool down to body temperature. Preheat fan forced oven to 180 C.

Transfer the honey mixture into a bigger bowl and add the flour. Work in the flour until the dough is formed and is not too sticky.

Flour the working surface and the rolling pin (otherwise you can try using the cling wrap over the dough so it won't stick to the pin). Roll the dough to 3-4mm thick. Cut the shapes and put onto a baking tray lined with baking paper (no need to grease). Bake for 4-5 minutes. Repeat with teh remaining dough, flouring the surface and the pin each time.

These cookies can be easily decorated, eaten "as is", made into a "sandwich" cookie with some filling between the two biscuits. Sweet-sour filling workes better as the biscuits themselves are pretty sweet.
