I have some mince left over from when i made pasta last night (its not cooked or anything just nice plain beef mince)

Does anyone have any ideas on how to make rissoles?? or share their delicious recipes? Would love to make it tonight so be quick! :D

A really basic recipe is just to add to the mince - an egg, some breadcrumbs, grated vegies (ie carrot, zucchini) and a bit of tomato sauce and salt&pepper. Just work with it until you get a good rissole consistency and bung it in the pan. :)

This is how I make my rissoles.

1 onion, lightly cooked so it just goes limp and soggy (IYKWIM)
1 or 2 eggs (depending on how much mince you have) to bind.

You can add some grated carrot or zuccini if you like (very yummy)
or some grated cheese or basically whatever you want. Mixed herbs etc

Just moosh it all up with your hands and form into patties. You can coat them in cornflour or breadcrumbs...whatever you have...or nothing.
And cook! vwalah! Very easy!

You can basically throw whatever you like into it! Peas and corn would work fine! :)

Yeah I think you might have to cook the frozen ones before hand...?
Don't know if they would cook properly inside the rissoles, you could try though.

...or another way to use up mince is to make Porcupines!!! basically, you can use whatever you have used to make the rissoles, but add some rice (raw) to the mixture and simmer them in some tomato sauce. The rice cooks and sticks out of the mince balls and they look like little Porcupines!!! Very yummy!
