Hi
Has anyone got any recipes for low fat, healthy muffins, biscuits or slices.
I have been doing a lot of baking for the kids lately but find I eat alot of it myself.:eek: So I thought if I could cook low fat and healthy it might help a bit.:fingerscrossed:

I need some too, there has too been someone out there with some....need something yummy to put in DH lunch to stop him from buying takeaway!!!

This bread is sweet and just a bit spicy with cinnamon and nutmeg, but still healthy. DD (2.5 years) loves it. 4g total fat and just a trace of saturated fat.
"Dry ingredients":
1 cup raisins (pour boiling water over, soak for 5 minutes & then drain)
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp nutmeg
1 tsp each baking soda and baking powder
1/4 tsp salt.
"Wet ingredients:
1 egg
3 tbsp vegetable oil
3/4 cup low-fat yogurt
1/2 cup packed brown sugar
1 tsp vanilla
1 cup finely shredded carrot (I just use a regular grater, it seems fine enough)
Optional topping: 1tbsp rolled oats and 1tbsp oat bran, combined together.
Combine all the above dry ingredients. Set aside.
In large bowl, beat egg till fluffy. Beat in oil. Mix in the rest of the wet ingredients. Add flour mixture and stir to combined. Pour into greased or foil lined 8 inch x 4 inch (1.5 L) loaf pan. (I just line with baking paper and don't grease it at all). Sprinkle on topping if using.
Bake in 180oC oven for 50 to 55 minutes or until toothpick/skewer inserted in center comes out clean. Let stand in pan for 5 minutes before turning out. Remove from pan and let cool before slicing.
Tip - needs to be refrigerated. I didn't once and all the carrot inside went mouldy over night :(

These low fat muffins are really yummy!
Easy Fruit Muffins
About 2 cups Mixed Fruit medley
1 level tspn mixed spice
3/4 level tspn bicarb soda
2 cups strong boiled tea
2 cups self raising flour
Dash honey
Preheat oven to 180 degrees.
Combine fruits, bicarb, mixed spice and tea. Leave to soak for 15 mins.
Gently fold flour into mixture in one go. Gently stir in honey. Be careful not to beat because this will make the muffins tough.
Coat a 12 cup muffin tray with cooking spray. Spoon in mixture into the muffin tin, dividing equally between 10 cups.
Bake for 20 mins or until firm to touch in centre.
Allow muffins to sit for 5 mins in the tin before turning out onto a wire rack to cool.
