I finally made my order from the butcher and I have managed to source a turkey breast so I was wondering.. What kind of stuffing is the nicest for turkey? :confused:

sorry this is totally disjointed :p

I don't really eat much meat (although i do have to eat some). and back in the day when i did eat it properly, i never made a turkey, i did make lots of roast chickens though. So based on that...

My recipe (and its more of a concoction than an actual recipe considering i don't have measurements or anything :rolleyes:).
-Mince meat (almost as much as will fit into the cavity of the carcass)
-grated carrots
-grated/chopped up onions
-bread crumbs
-parsley+additional herbs+salt and pepper
-several eggs

and then you mix it all up together (its actually a hamburger recipe, but it tastes AWESOME if its cooked inside of a chicken...not sure why) - i use my hands - and then stuff it into the bird. if you have the patience, or if you want to do it the old fashioned way you then sew up the birds opening with some kind of thread and a sterilised needle.

I usually have so much stuffing that i can make several patties and put them in the tray under the roast, along with the potato's and onions.


ooh, and the trick that i learnt from jamie oliver is to use butter to crispen the roast, and to stuff it UNDER the skin, instead of over the top. works a charm.
