Hi everyone. I'm having a vegge friend over for dinner tomorrow and I was wondering if anyone had an favourite easy vege curry..like chickpea, pumpkin, dahl or similar.

I have never cooked a lentil curry...only bought them.
If you have time Oscars Mum can you please give me a quick run down?

PS I don't put it 'Cilantro' or 'Garlic'!

Ive got two vegetable curry recipies for you:

Vegetable Korma Curry
(recipe is for microwave, but you could easily do it on the stovetop.)

1 onion, chopped
1 tablespoon oil
2 tspns grated ginger
1 garlic clove, crushed
430g can korma curry flavour base
125g green beans, trimmed and halved
1 cup cauliflower florets
2 carrots, chopped
2 zucchinis, sliced
2 tomatoes, chopped
1 potato, cubed

Combine onion, oil, ginger and garlic in a microwave safe bowl. Microwave on high power for two minutes.
Stir in remaining ingredients. Cover with a lid or plastic wrap. Cook for 5-6 mins, stirring twice.
Serve with rice and a little natural yoghurt on top.

Pumpkin and Vegetable curry

1 tablespoon vegetable oil
1 onion, cut into wedges
1 clove of garlic, crushed
3 tablespoons mild indian curry base
4 cups of chopped mixed vegetables (eg, potato, carrot, cauliflower, green beans)
420g can Condensed pumkin soup
1 soup can of water (use the soup can once you've added the soup)
300g can chick peas (could easily substitute for a can of lentils), drained

Heat oil in a large saucepan over medium heat.
Saute garlic and onion for 5 mins or until soft. Add curry paste and cook for 30 seconds or until aromatic.
Add vegies, soup, water, chick peas and simmer, uncovered for 15 mins or until vegies are cooked through.

Serve with Aromatic Basmati rice.
To make rice: Cook rice according to packet instructions. Add two lemon leaves to the rice as its cooking. Once rice is cooked, remove lemon leaves. Stir through 2 tablespoons of fresh chopped corriander.
