I want to bake those 'perfect cupcakes' - the ones that rise perfectly & are really tall?
Any tips?

I use any store bought mix for any kind of cake & then put them in strong patty cases inside a patty cake tin. It works perfectly every time.

Patty cake tin? Same as muffin tin? or are there different sizes?
I will have to buy better than 'homebrand' patty pans I guess LOL...

Yup same as muffin tin.
The store bought mixes are definately easier, and I have never messed up with them, ever.
Only tip I have is to make sure your oven is level inside, other wise your cupcakes may end up lop sided :D

My tip, when using a packet mix I always add a little bit more of the wet ingredients. For instance if it says 100g butter I would add 150g. I think that this makes the cupcakes more moist and fuller.
I have a great recipie that ALWAYS makes the yummiest cupcakes that rise up heaps. All of my friends ask me to make them for them for parties of morning teas! :yes:
I agree with the other girls. I only use the muffin tins you get from the super market and I buy the silver foil with lined paper inside to make the perfect cupcakes. If you are talking "neat" cupcakes then get yourself a piping bag and pipe the mix into the patty pans and if you make them the same way then they should rise the same.
Let me know if you want me recipie. It's really really easy!

Of course we ALL want your recipe... piping the mix, yes that is a good tip... I found it a little messy today - gr8 idea:thumbsup:

Hi Tingles.
Here ya go! I figure it's ok to post! Are you ready... It's really really really hard....
Quick Cup Cakes Makes 12
60g butter or margarine
11/4 cups S.R. flour
1/2 cup sugar
2 eggs
1/4 cup milk
1 teaspoon vanilla essence
1.Preheat oven to 220°C and place patty
cases into patty tins and set aside.
2.Using the small Mixmaster bowl, place all
ingredients into the bowl and beat until
combined, start mixing on Low speed (1),
slowly increasing to Medium speed (5).
3.Place rounded dessert spoonfuls of batter
into the patty cases and bake for 12-15
minutes.
4.Allow to cool and decorate as desired.
Enjoy! As I said to Sammilee, the recipe never fails on me!

The only other tip I can think of is that I make sure the patty cases are around 2/3 full before baking. It seems to get them to rise to a nice height. If you end up with not quite enough batter to fill 12 cases, put a few cm of water in the 12th empty muffin cup so that your pan doesn't burn.
Egg & dairy free choc cupcakes (good for kids parties with allergies!)
Makes about 12 (muffin tin size)
1.5 cups SR flour
3 tbsp cocoa powder
1 cup caster sugar
1 cup water
1 tsp vanilla essence
1 tbsp white vinegar
0.5 cup vegetable oil
Put all ingredients in a bowl & mix with a whisk still smooth. Spoon batter into patty cases, bake at 180oC till a wooden skewer inserted in the middle of one comes out clean - between 15 & 20 min depending on your oven.
